View Full Version : Gluten Free Hedgehog Slice

I've just been a bit naughty & partaken of some yummy hedgehog slice from my local bakery.

It got me to thinking that I should include some in the snacks when we have some family come up this holiday season.

Only problem is, MIL has coeliacs disease and cannot have gluten or wheat products at all.

I don't really go overboard with the gluten free stuff when she comes up, I just try to make sure there are a nice variety things she can eat, but was wondering if anyone might have a good recipe for some gluten-free hegehog slice??

If you already have the recipe, try using Gluten free flour instead of regular flour, and substitute the biscuits with gluten free biscuits too. Coles and woolies both have a good supply of gluten free recipes. I find the orgran flour excellent, and the basco is good (though i don't use it any more, as it has soy in it).

Oh, and add a little extra oil or liquid to the recipe, as gluten flour is a bit dry.

I actually have the orgran flour from a recipe I (attempted to make!) once before & I found it to be extremely sticky. I was attempting to make a regular recipe using this flour as a substitute & it just didn't work well at all. I'm normally a pretty good cook, so I don't think I completely stuffed it, it was more like the flour just wasn't suitable.

Would adding the extra oil or water make a difference??

Gluten-Free Hedgehog Slice:

3/4 cup sweetened condensed milk
60g butter
125g dark chocolate (chopped)
150g gluten-free biscuits ( I like to use Arnotts Rice cookies)
1/3 cup unsalted roast peanuts
1/3 cup sultanas

Grease 8cm by 26 cm bar pan; line base and 2 opposite sides with baking paper, extending paper 2cm above edge of pan. Combine condensed milk and butter in small pan; stir over low heat about 5 mins or until butter melts. Remove from heat;add chocolate; stir until smooth.

Break the biscuits into small pieces in a large bowl with peanuts and sultanas; stir in the chocolate mixture.

Spread mixture into prepared pan; cover, refrigerate 4hrs or until firm. Remove from pan, cut crossways into slices. Enjoy:thumbsup:

Thanks for that :) My DS is gluten free so we are always looking for treats he can have. I might give this one a go too.
