Hi there
You could use gingerbread recipe and buy cookie cutters - xmas trees, angels, bells etc and that is nice and simple and yummy,
or if you want to be a bit mroe creative (but still very easy) you can make those yummy chocolate truffle balls (condensed milk, arrowroot biscuits crushed in blender or the like, cocoa and coconut) and roll them in melted chocolate and when that has set you can drizzle white melted chocolate on the top and place a tiny piece of glace cherry on top to make them look like mini puddings - i do these most years and they look gorgeous and are super yummy!!!

Hope that helsp - or makes some sense! i wish i had a photo i could give you to make it easier.
