We recently found out that AJ is allergic to all of the above, thank god he can eat eggs and fish!!
I love gooking and experimenting with recipes, and I thought i'd post my results here for other parents who have children with similar allergies.

The first one are some yumo chocolate bickies...

Ingredients:

¾C Sugar
1 egg
1 ¼C GF flour mix
1/2C Quinoa flour (this gives a more nutty flavour, use more GF if you don't want to use quinoa)
3 heaped tbs coconut butter
3tbs coco
1tsp baking powder
1tsp vanilla
¼C Sunflower seeds (optional)
Directions

Preheat oven to 200 degrees (gas, fanforced)
Melt coconut oil
Add all ingredients to a bowl and combine
The mixture should be between firm and sloppy, if it isn’t add more coconut oil or flour respectively
Place spoonfuls onto a lined baking tray and bake for 12 minutes.
Cool before removing

Fruit biscuits
Makes approx. 50
Ingredients

Pastry
1C Orgran plain flour
2/3C Sugar
1/2C buckwheat flour or quinoa flour (gives nutty flavour)
2Tbs linseeds
2Tbs sesame seeds
2Tbs butter
1 egg
Nutmeg, cinnamon, cloves and cardamom to taste
Enough water to form soft dough

Filling

10 dried dates, chopped
1/4 C Sultanas
5Tbs strawberry jam
2tbs sunflower seeds/nuts

Directions

Preheat oven to 200
Rub flours, spices, sugar, egg and butter together until the mixture resembles fine breadcrumbs
Add linseeds and sesame seeds and combine
Add enough water to pull the mixture into a soft, slightly sticky, dough
Set aside and make the filling
Combine all ingredients into a bowl and mix well
Working with tennis ball size bits of dough, roll the pastry out to about 3mm thickness
Spread the mixture thinly out on one half of the pastry
Fold the pastry over and flatten out the filled pastry
Brush with butter, milk or egg white and sprinkle cinnamon sugar on top
Cut the pastry into squares
Place each square on a lined tray (try to use silicon paper, as they get messy and sticky when they bake) and bake for 12-15 mins until golden brown.
Cool before removing from the tray.
Store in an airtight container.

Note:
You can substitute any dried fruit and jam for what is in the ingredients list. Try marmalade and dried apricots

Basic cake
Ingredients

3 eggs
¾c sugar
2c orgran SR flour
1tsp vanilla extract
1tsp baking powder
1c goat/rice milk (or cow milk)
¼c coconut oil

Directions

Preheat the over to 180 (gas, fan forced)
Line a 20cm baking tin
In one bowl whip the eggs and sugar together until they are thick nd fluffy.
In another bowl sift together the flour and baking powder, add the milk and oil and blend together with the mixer
Fold the eggs into the flour and milk mixture
Pour the cake into the prepared tin and bake for 25mins or until a skewer comes out clean.

Honey Cereal
Ingredients

4C puffed cereal (I used rice and corn) or any plain cereal you want
4tbs Honey
1/4C mixed seeds (sunflower, sesame, pumkin, linseed)
Directions

Preheat oven to 220
lay some baking paper on a baking tray then spread out the seeds and puffed cereal
Take out spoonfuls of honey and drizel over cereal mixture, coating well.
put into a hot oven for 5-8 mins, take out and stir the mixture
put back in the oven for a further 8-10 mins
Cool then put in an air tight container, makes a great snack or breakfast cereal
