I bored of pasta bake etc :yes: spag boll and lasange
any healthy pasta dishes ideas..i love using fresh ingredient ie basil corriander & chillies
any ideas or recipies:chef: would be great

what about caneloni the big fat tubes you stuff or what i do is buy fresh lasagne sheets and put whatever filling you like inside and roll it up then top with some pasta sauce and mozerella cheese and bake for 20 mins or so. i usually do a spinach and ricotta stuffiing or pumpkin and sour creme or sometimes bolognise whatever you like
we love a tomato sauce
tom paste
tin tom's
onion garlic
with bacon and chilli- healthy just use the tops of the bacon (we use the whole rasher)
with basil, olives and capers
with chicken and mushrooms
with tuna, lemon zest and juice and capers
Another nice one is pasta tossed with - pan fried shallot, tin tuna (in olive oil), garlic and lemon zest (no tomato in this one).
Another one is just pasta with parmesan (block stuff) olive oil and lemon zest and juice (jamie oliver). Nice with chicken, steak, fish or on its own.
add- you can also put fresh parsley/basil/chives through any, whatever takes your fancy!
jamb has some good ideas!
My current fave is chopped olives, halved cherry tomatoes, a tin of tomatoes, fresh basil and garlic, all kinda cooked up into a sauce. Very tasty with some parmesan, and super quick too. It only takes as long as the pasta takes to cook.
I also like a tuna one like jamb does, but I oven roast halved tomatoes until they are really tasty lookin', then I just fry up garlic, black olives, red onion slices, maybe a sliced chilli and capers and a tin of good quality tuna. Again, serve with basil and parmesan. Oooh how I love that one.....:)

Pasta and pesto. We make ours with a couple of bunches of basil, some olive oil, a handful of grated parmasan, salt to taste and a squeeze of lemon juice. Whizz in a food processor and voila! You can roast a few pinenuts (put in a hot dry frying pan until nicely coloured) and add those, too. We also add a touch of chilli to this but that's not even remotely authentic! (not much of my cooking is)
We also do a very simple mushroom and spinach thing. Cook some sliced mushrooms in butter (with some salt and garlic), add a bagful of baby spinach leaves and some chilli flakes (if you like them) and stir through cooked pasta. Serve with a bit of grated cheese.
I don't know how real stroganoff is made but I was mucking around in the kitchen one day and came up with this: sweat half a red onion (finely diced) and a clove of garlic (also finely diced) in a pan with some olive oil, butter and a little bit of salt. Cut some beef into smallish cubes and add to the onion. Add chilli flakes to taste. While this lot is cooking, slice some mushrooms (about the same amount as the beef - NOT IN WEIGHT!! :eek: ) and add these when the beef is nearly cooked. Let it all cook down a little before adding a small handful of chopped fresh basil and about a tablespoonful of chopped fresh oregano. Add about a cup of beef stock, let it come to a simmer and then add about 1/4 of a small tin of evaporated milk (more virtuous) or fresh cream (more calorific). At this point, check seasoning ad add more salt if desired. The liquid will be pretty thin and that's fine if you like it like that. Personally, I prefer to thicken it up a little by adding a teaspoon of cornflour (well diluted in a small amount of cold water) to the pot and bringing the lot to the boil. That's it - ready to serve.

By the way, the pesto sauce is great stirred throughh cooked chicken. If you can't be bothered making the sauce, Sacla do a really nice one ... Fry off some chicken and a little garlic and chilli, add a handful of chopped chives and stir through some pesto sauce. Yum.
(Even yummer if you fry off some mushrooms with the chicken)
