Just heard on the news that fresh cherries will be aplenty this summer as they survived the drought:smiliedance:
I cannot get enough of these delicious little stone fruits, so I will be stocking up big time.
However, this year I want to do more with them then just scoff them by the handfuls while sitting in the shade....
Do you have any recipes that are quick and easy please for fresh cherries?

Brandied cherries.
glass jars with good lids, or spring clip jars
sugar
cherries
brandy
Pit the cherries with a cherry pitter
put them in jar til full.
Pour in sugar till the jar is about 1/3 full
fill with brandy and stand in a cool dark place for at least two months. Shake from time to time in the first weeks to get the sugar dissolved.
Do these now in fancy jars and give them for christmas next year, they are great served with premium vanilla icecream with some of the brandy poured over.
My cherry tree is laden, a few more days, and I'll be picking them by the bucketful.
At least 2 months:eek: I don't know if i can wait that long:laughing:
Good to keep for winter cobblers, with custard and even icre cream:yes:

Cherry Clafoutis
This is a classic French 'batter' pudding form Limousin - I absolutely loved it as a child and now love even more. You just make a simple sweet batter, pout it over fresh cherries bake it, then serve warm with thick cream. Its so easy peasy!!! ANd the cherries can be replaced with plums, or blackberries.
I found this recipe on the net but it looks identical to the one I been making by eye for years...
Cherries about 500 grams serve 4 people. It's traditional to leave the stones in the cherries as they add a bitter, slightly almond flabour to the clafoutis - but make sure you tell everyone who eats it! ;)
Pre Heat oven to 190°C.
Place about 500 grams of cherries in a buttered, shallow, heat proof serving dish.
whisk 2 eggs lightly.
Add 1/4 cup caster sugar and 1/2 cup self-raising flour and stir gently until smooth.
Gradually stir in 1 cup milk, 1/2 cup cream, and 1 tablespoon kirsch or brandy until mixture is smooth.
Pour mixture gently over cherries.
Bake at 190 C for about 25 minutes, until the top is risen and golden brown. Serve warm with thick cream.
this can be eaten cold too - just pop in fridge...
