I thought my boring thread would have a better chance of survival if I gave it a misleading title :D.

My dad gave me a huge bunch of celery, and I'd really like to make celery soup from it...

Anyone out there have a good recipe for it?

I know my Aunty made a celery, bacon, and rice (?) (I think) soup the other day (she owns a gourmet take-away) and yeah, just fry some onion and garlic, add bacon, then put into a big soup pot, add vegetable stock, cooked rice (or... actually you could probably put dry rice in, if you're going to leave it cooking all day) and heaps of chopped celery. Herbs. Pepper.

Or there's always:

one zucchini (one zucchini)
a little bit of onion too (a little bit of onion too)
one big celery (one big celery)
a little bit of garlic too (a little bit of garlic too)
Put it in the pot and you've got vegetable soup, a-huh-huh, a-huh-huh, a-huh-huh

Hmmm.

the_queen, that sounds yummy.

You could probably make a killer cream soup out of that:

Fry off half a bunch or so of finely sliced eschalots and a couple of cloves of garlic in a little olive oil, with a big bayleaf, a couple of those big green chiles, some big strips of lemon zest (use a peeler to get wide strips, avoiding the white pith) and... either oregano or thyme, maybe both.

Throw in a huge pile of finely sliced celery (including the leaves!), maybe a chopped green capsicum or two, maybe a few handfuls of chopped spinach, a couple of cups of brown lentils, and a goodly amount of salt. Cover with vege stock, and simmer for an hour or so.

Simmer for an hour or so, fish out the lemon zest and the bayleaf, and run through the blender until smooth. (this is why you finely slice the celery, so you don't have to deal with the strings)

Stir through some sour cream (you might need a fair bit), and correct seasonings with whatever it needs - salt, cracked black pepper, maybe some lemon juice, possibly some paprika.

This recipe is completely untested. It sounds like it ought to work (it's loosely based on my mum's cauilflower soup), but I take no responsibility for any ill effects that may result.

And yes, bacon would probably help.

Ahh yes, cream... with bacon and cream, there is no wrong turn that can possible be made...

...and cel (your name rather lends itself to celery soup really, doesn't it?) I suspect that Mr N is perhaps a cow hugger... lol, and I'll bet it was his wife's influence there :D.
