Ok, so DP and i have been independantly living out on our own for a good month now...
And while i havent yet burnt down the house i am running out of meal ideas.
So i was wondering, what is your favourite meal to cook... Whether it take for 5 hours or 5 minutes, i would love to grab some recipes from you all!! Or i fear we may starve ;)

Depends on what thing you like to eat I suppose :)
I buy oven chicken nuggets and fish fingers. I cook them up and have them with salad when I can't be bothered cooking too much. Good for summer too! DD loves it also. For the salad, I drizzle balsamic vingear and olive oil over for dressing.
Then there is good old homemade meat pie.
500g mince
1 onion
beef stock or gravy powder
a few squirts of tomato sauce
herbs (optional)
water
Brown the onion and mince, then mix in stock and tomato sauce. It should go all gravy-like. Add any herbs you might want. Rosemary is good. Then a little bit of water so it isn't too dry.
Line a dish with puff pasty, pour in the meat mix then cover with puff pastry (or mashed potato if you want a shephards pie). Cook in an oven at 180 for about 20-30 mins, or until the pastry is nice and brown. Serve with steamed vegies. Yummm!!!

No pastry quiche
3 eggs
1 1/2 cups milk
4 rashers bacon, chopped
1/2 cup cheese
spring onions
sun-dried tomatoes
mushrooms
(you can add anything you like really)
Add all together and mix well. Place into a dish and bake for 30 mins or until set and brown on top. 180 oven.
Or even just omelettes with whatever fillings you like served with salad.
Risottos are good. My favourite is with chicken, snow peas, sun-dried tomatoes, mushrooms and white wine. The directions for making risotto are always on the packet of aborrio rice.
I also make my own pizzas with homemade bases. I can't for the life of me remember the recipe for the base, but I know it has yeast in it and I also add herbs into the dough. It goes all nice and crispy and gives it that extra yummy flavour.
For the topping, well, it is only limited by your imagination. I like to use boconcini (maybe not while preggers), mozzarella, avocado, ham, pancetta, capsicum, etc etc.
Another yummy thing is to stuff chicken breasts with cheese, avocado, sun-dried tomatoes, olives (or whatever really) and then bake them in the oven. It is best to wrap them up in foil so the stuffing doesn't come out! I then serve it with a spicy tomato sauce that I make with a tin of tomatoes, chilli powder and some tobasco. You can also add garlic. Mmmm...
I better stop! I am making myself hungry!

another simple lunch is boiled basmati rice mixed with small tin of olive oil tuna, lemon juice, steamed veges such as broccoli, red capsicum, mushroom & zucchini, dried onion flakes, lots of lemon pepper, dried garlic granules, , ground white pepper, thai seasoning if you want....it is the best!!
you can experiment with flavours, but have to have lemon pepper, the veges and olive oil tuna at least!!!
also nice with a sprinkling of finely grated parmesan...makes it like risotto...

Ohh, What a great thread, and I think we will be having Spag bol, or chicken salad for tea!
My fav has no name, but I always loved the way the meat just falls apart, and as an adult, I love how easy it is!!!
Couple of peices of oysterblade steak (its cheap!)
put in a foil lined lasagna dish (make the foil long enough to be able to wrap back over the meat)
Sprinkle with 1 Pkt of french Onion Soup and
2 tablespoons each of Water and Red wine
Close the foil and bake at 180 for 1/30 to 2 hours.
Its so nice with Mash, and makes the house smell so yummy!

yum that steak one sounds yum anxious em!! Might give that a go!
mumtofour ~ i dont have a slow cooker, do you need them to cook silverside and stews in??
Our favourite meal is tortilla wraps.
Plenty of salad veges ... grated carrot, shredded lettuce, beetroot, tomato, hard boiled eggs, grated cheese, chopped gherkins, chopped onion, sliced mushrooms etc - anything that takes your fancy (or is available from your fridge - lol)
Meat ... chopped chicken cooked in a couple of Tbsp of your fave sauce or mairnade - teriyaki, butter chicken, sweet chilli, chinese plum etc
or
Chopped beef/pork treated in the same way.
Put the meat and veges out on the table, add sauces, mayonaise and sour cream, warm up the wraps in the microwave and proceed to make your own customised creation!
The kids and dh love this one as they can have what they want. DD has pretty much just salad and will eat 3 full size tortillas, Dh will eat 3-4 with everything, ds will eat 2 ½ with everything and I will eat 2 with everything!
Corned Silverside
Place silverside in a large pot (or slow cooker).
Cover completely with water.
Add 2 Tbsp vinegar (malt preferred)
Add 3 Tbsp brown sugar (to cut the saltiness)
Add 5-8 whole black peppercorns
Add 2-3 bay leaves
Cover and simmer until cooked depending on how you prefer it cooked.
I put mine in the slow cooker at 8am and turn it off at 3pm - this means that I can take it out, let it cool and then slice it. If it is sliced cold, it will slice easier and go further. It is easily reheated if desired.
Serve with a mustard sauce mae with the beef water or parsley sauce and the traditional carrots, potato, onion and cabbage.
I have 2 corned silversides cooking as I type ... yum! One is to go to a family that has a very sick Mum at the moment ... hopefully it will be great for tonight and there be leftovers for tomorrow!

Thankyou Kyra for that corned silverside recipe! I love it the next day in a sandwich!! Soooo yummy!
I have a question for all the keen chefs... If i wanted to cook some chicken breasts in the oven, say like apricot chicken style, how long and at what heat would you cook them?

No, but they are soooo much easier to cook in and come out alot more tender in a slow cooker.. Stews/Casseroles can be cooked in the oven..Have a look at the Maggi sachets at the supermarkets, there are lots of things to make with them:)

Lamb shanks a la Mytillieroo.
Brown 4 Lamb Shanks in olive oil in dish or pan.
stir in 400ml of red wine (merlot good), beef stock, and 2 crushed cloves of garlic. Bring to the boil and cover dish or pan with foil.
Cook in mod slow oven 160 degrees for 2 1/2 hours, turning shanks a few times.
Remove Shanks from dish and cover to keep warm.
Pour juices into a jug.
Return dish/pan to heat add 1 tbsp of olive oil and 2 small onions sliced thinly.stir until soft. add 1 tablespoon of plain flour and reserved juices, 2 tablespoon of redcurrant jelly and 1 tablespoon of chopped fresh rosemary. simmer uncovered till boils and thickens.
Add the shanks and cook over a low heat until shanks hot. Serve with sauce and mash!!
BTW redcurrant jelly can be found in most supermarkets made by Beerenberg I think...
THis is my fave thing to cook as I can go off and get ready whilst doing or have drinks with friends before we scoff into it!!!
