Okay guys.. DH needs some inspiration with dinner tonight. We're kinda sick and tired of the traditional Sunday night roasts. We're looking for something thats a bit different tonight and nothing is off limits as my DH is a great :chef: (love this smilie hehe) and more often than not he puts me to shame.
So we don't want our usual risotto's/steak/bbq/roasts/pasta's ect.. something a little different would be awesome !!
What's for dinner tonight at your house ?
Thanks in advance ! :)

This serves 3-4ppl, add more of everything to taste for more ppl
Great with blanched asparagus, herby potatoes, sweet potato and carrot, broccoli, pumpkin
Awesome with baked potatoes and fresh salad and balsamic dressing. Crusty bread. (This is what we're having yum yum yum yum)

Okay, you asked for it.
The recipe below calls for water-chestnut flour, which you can get from asian grocers. It goes extra-super-crispy when you fry it, so it's worth the effort if you can track it down.
Otherwise... possibly cornflour or plain flour, I'm not sure which would work better.
You'd want to get started on the chiles for the sauce fairly soonish, too.
==================
Crispy beef with orange sauce
Orange sauce:
6 oven-dried long red chiles
1-2 large fresh oranges
2 limes
1 bunch chives, chopped
1-2 cloves garlic, crushed
2 tbsp Soy sauce
2 tbsp vinegar
2 tbsp sugar
3 tsp Corn flour
Beef:
1 kg beef, cut into thickish strips
1/2 cup water-chestnut flour
Black pepper
Ground star anise
Oil
Orange sauce:
To make dried chiles, take long chiles (the six-inch ones from the supermarket, not the tiny ones!), slit lengthwise and place on oven trays. Leave in slightly ajar extremely low oven for most of the day, until glassy and pliable. Do not over-dry.
With a vegetable peeler, very thinly peel the orange, leaving the white pith behind.
Squeeze orange and limes, and pour into a bowl. Add sugar, soy sauce and vinegar, along with about half a cup of hot water.
Correct as appropriate - you want at least two cups of reasonably strong mix, with an even mix of salty, sour and sweet flavours.
Chop chiles into half-inch pieces, and chop orange peel into fine matchsticks Fry in a little oil until fragrant.
Pour on liquids, and simmer for a couple of minutes.
Mix cornflour with 1/3 cup of cold water, and stir into boiling mix. Simmer until thick. Chop the chives and stir through. Keep warm until ready to serve.
Crispy beef:
The water-chestnut flour will be lumpy, so mix in food processor, along with pepper, ground anise and a little salt.
Mix in water and a couple of tablespoons of oil to make a thickish batter.
Note: the batter sets like glue if left unattended.
Coat beef strips in batter. They may need a second dipping after they dry slightly.
Heat a cup or two of oil in the wok over high heat, d deep-fry a few beef strips at a time until golden brown, and drain on paper towel.
Serve beef strips over rice, liberally coated in the orange sauce.

We had a roast last night, chicken one. I quarter a lomon and squeeze it all over, then shove it inside, then i get garlic and rb it all over and stick it inside, then i get fresh herbs abd rub them all over and - you guessed it - stick it inside.
We had roasted tomato salad with boconcini basil and balsamic vinigar and a herbed cous cous salad.
Yum
For desert mangos strawberries and ices cream
OH, one of my favourite meals at the moment is
a whole baked fish seasoned with lemon and pepper on a warm green salad made from
asparagus, cucumber strips and beans (must put a sprinkling of nutmeg on the beans)
add some almond halves and cherry tomatoes to the salad and season with
a warm sauce made from butter (I use the butter I cooked the asparagus in), lemon, pepper and a tiny bit of sage. YUM
You can stuff the fish with some cooked rice of coucous mixed with herbs like sage, corriander and parsley if you don't think the fish and salad is enough. but I often find that with a bottle of white, and some desert it's a perfect amount

Tonight we are having pizza because I had my nana's 80th bday and had a big lunch.
But otherwise it would of been Taco's.
Taco's are nice and something different. How bout soft shell? - Much more child friendly.
