We have a great Chilli bush we planted last year and it gives up too may chillies. So, i want to make a sauce out of the chilli's.
Does anyone know where i can find a recipe for this?

YuM! I dont have a recipe but i do have a chilli itch that is impossible to scratch. I'llbe watching this thread.
Did you get the lemon chilli pickle or lime chilli pickle recipe in the chilli lover thread that was going?

Here's a great recipe for a chilli sauce that is kind of similar to the one commonly available... Its very very yummy and a great xmas gift - people will love you :yes:
I warn you about the lemon oil pickle recipe (that I posted in the chilli lovers thread) - its very very hot, too hot for a lot of tastes... the chilli sauce following is far more widely palatable :D
Sweet Chilli Sauce
1 kg tomatoes, blanched, skinned, chopped
500g sugar
3 TableSp lemon juice
1/3 cup white wine vinegar
6-10 red chillies
2 teaSp salt
2 TableSp fish sauce
To peel tomatoes, put in large bowl and cover with boiling water for 10 minutes.This helps the skin to peel so much easier. Chop the tomatoes and mix with the sugar. This must stand for several hours or over night (over night best).
When settled, add all ingredients to big pot and simmer until thick.
This can vary from 40 minutes to 1.5 hours depending on juice in tomatoes etc - try not to overcook as the flavour is better - zestier if not.
Pur into warm sterile jars. This will keep for at least 6 months*.
* theoretically - I've never managed to test it - it disappears before the time is up YUM!

That sweet chili sauce recipe put in nice bottles would be a really nice xmas present for the chilli enthusiast.
