Can anyone help me with recipes for homemade cereal?? I'm more than happy with good old vita brits, cornflakes or porridege. DF on the other hand prefers a more glamorous cereal (eg. sent him to the shops last night & he came home with 'crunchy nut clusters' in a tiny box - but they were on special!) They are just too expensive and not particularly healthy. I'm thinking I could probably make something similar my self for a fraction of the cost.

Breakfast Crunch

4 cups rolled oats
1 cup wheatgerm
1 ½ cups of brown sugar
½ cup sesame seeds or ½ cup coconut
½ tsp mixed spice
½ tsp cinnamon
pinch of salt
½ cup of vegetable oil
approx ½ cup of milk

Measure all of the dry ingredients into a large roasting pan. Add the oil and mix thoroughly using clean hands. Stir in enough of the milk to make the mixture a lumpy consistency. Mix enough to keep the lumps fairly small as they are rather hard if too large.

Bake at 150degC for 30-40 minutes until the mixture browns evenly, stirring thoroughly every 10 minutes.

Cool the mixture and store in an airtight container.

I often add sultanas, apricots, pumpkin seeds, sunflower seeds, linseed, dates .... basically anything that takes my fancy at the time. This is loved by all of my family and is basically a nice toasted muesli. The inital outlay for the ingredients is a bit expensive, but they will last for several batches and you will come in way under what you would buy something similar for at the supermarket! Not to mention the absolutley delicious aroma of it cooking that fills your house! I have had friends pop in to drop something off and stay until it was cooked to taste some as it smells so good!

This is my Mum's recipe, I grew up with this available all of the time and am happy to be carrying on the tradition in my family to keep her memory alive!
