Anyone have a good reciepe for zucchini slice...?

i did have a recipe for Zucchini Slice but I cant find it... Heres a similiar kinda one

EASY VEGETABLE SLICE

Ingredients ...
4 slices wholegrain bread
1 tablespoon margarine
4 slices lean ham, cut into small pieces
1 small onion, grated
1 small zucchini, grated
2 eggs
1 tablespoon SR flour
2 teaspoons finely chopped parsley
½ cup grated reduced fat cheese

What to do ...
Cut the crusts off the bread. Spread lightly with margarine. Arrange spread side up on the bottom of a shallow dish. Mix the shredded ham, grated onion and zucchini. Add the eggs, flour, parsley and cheese. Mix with a fork. Spoon mixture over the bread. Cover with plastic wrap.

Microwave on med-high for 8 minutes. Serve hot or cold

Serves 4.

Tastes pretty good... DD likes it cold

Hi Kim, I do this one all the time (its really easy), and everyone loves it! Its really nice hot, or cold with salads!

Zucchini Slice

Ingredients:
750g grated zucchini (after grating, squeeze out all excess juice)
1 cup grated cheese
1 cup SR flour
3 bacon rashers (chopped)
1 lge onion (chopped)
1/2 cup cream
salt & pepper
5 eggs

* You can also add corn kernels too, but just take out a bit of the zucchini if you do...

Method:
In a bowl, combine zucchini, cheese, flour, bacon & onion. Add cream, salt & pepper (just a dash of each), and mix. Add lightly beaten eggs and mix well. Pour into baking dish and press down well. Cook in moderate oven for 40mins or until browned and cooked through.

5X eggs
4x grated zucchini
1x small onion chopped small
1x pack of bacon chopped
1 cup of plain flour
half a cup of oil
half cup of crated cheese

mix all together and bake for 40 mins very yummy:chef:

Zucchini Slice
1 cup chopped onion
3 rashers bacon, chopped
1tbsp oil
4 zucchini (400g) grated
1 cup grated cheese
1cup SR flour
pepper
3 eggs, beaten
~ Fry onion and bacon
~ Combine all ingredients in a bowl and mix together
~ Pour into a slab pan and bake at 180 for 30-40mins...or microwave for 15mins on medium power.

I prefer this recipe, it's similar to Zucchini Slice but has more veges :)

Vegetable Slice
1 onion, chopped
1 large carrot, grated
1 large potato, grated, excess liquid squeezed out
2 med/large zucchini, grated
1 cup cheese, grated
1 cup SR flour
1/2 cup milk
5 eggs, lightly beaten
6 rashers bacon, diced (optional)
~ Lightly fry onion and bacon
~ Place onion, carrot, potato, zucchini and bacon in a large bowl and mix well
~ Add cheese, mix, then add flour and mix til there are no pockets of flour
~ Combine milk and eggs then add to vege mixture
~ Pour into a greased & floured oven dish and top with extra cheese if desired
~ Bake at 180 for 30-40mins

Made this the other day and it was really good. Great way to get the family to eat vegies without realising it:thumbsup:

All the recipes seem to be fairly similar - mine is:

Zucchini Slice

2 x 12oz zucchini
1 large onion
3 rashers bacon
5 eggs
1 cup grated cheese
¼ cup oil (optional)
1 cup SR flour
S & P


mix all together & bake until done (about 45 mins?).
