Please help by sharing some of your lunch ideas.

My staple is tuna salad sandwiches, but I don't think I'm supposed to eat tuna everyday..

So what do you eat for lunch?

I'm a bit like you, have tuna sandwiches, but to mix it up I will have a tuna salad with boiled eggs pasta and the usual salad fillings in it. You're not *supposed* to have too much tuna because of mercury, but it is a very healthy lunch.

Turkish bread with swiss cheese, jalepenos, roasted capsicum, capers, tomatoes etc.

Three bean salads with some pasta through it.

Plain ol tomato and cheese sandwich.

Egg sandwiches.

Little platters like a ploughmans lunch minus the ham. (:()

Dinner leftovers like fried rice, curries, soups etc all heated till piping hot.

My current fave is sourdough with avocado, tomato, salt & pepper or just normal bread with the same plus tinned sardines in olive oil (OMG, so good & so filling). Eggs on toast. Fresh bread rolls with cheese & salad. And tomato. And salt & pepper.

I'm addicted to salt & pepper at the moment.

I also make a cous cous salad with craisins, lightly toasted pine nuts & pepitas, finely chopped spinach, coriander &/or mint and a squeeze of lemon juice & a splash of olive oil. With salt & pepper of course. Even DS is at me like a seagull when I have that. I rarely get to eat it myself.

Also, the cous cous, is it cold? Or do you cook it fresh? Is it from an instant packet - please don't take offence, I've only cooked cous cous once in the microwave, some kind of instant packet.

I've been making cheese and tomato toasted sandwiches, but to make them even yummier, I add fresh basil leaves from our herb garden. It tastes amazing.

Cheese platters with chutney and thick bread (I have a huge thing for cheese right now).

English muffins with scrambled eggs with cracked pepper (more a brunch idea).

My version of a ploughmans lunch usually consists of:

A bread roll/ciabatta/baguette etc, pickled onions, gherkins/pickle, olives, cheese, boiled egg and all on a plate like a little platter.

My 3 bean salad is as simple as a tin of 3 beans, mixed with anchovies, jalapenos, spanish onion, parsley, chilli and some kind of dressing made with olive oil and vinegarette.

You can also add some penne/spiral pasta if you want to bulk it up a bit too.
:) and I sometimes add a tin of tuna through this too.

Oh and couldn't agree more with salt and pepper! :yes:

I'm a bit of a condiment freak too, love mustards, chutney, sauces and cream cheese. Yummo!:smiliedance:

Oh and shaved parmesan!

This is what I've been eating everyday for lunch! Can't get enough.

Sandwich with cheese, cucumber, cherry tomato slices, red onion sliver, beetroot, mayo, salt and pepper. Yum!

Never from a packet!! I've had packet cous cous once & thought it was really gluggy.

Just equal parts dry cous cous with boiling water (1/4 cup is plenty, sometimes I have a bit less). Stir together in a bowl, cover with a saucer or whatever & leave to sit for 5 mins. Fluff up with a fork & sometimes a teeny bit of butter or olive oil & voila, yummy fluffy cous cous. It goes cold pretty quickly so the salad is lukewarm at best. Sometimes I soak the craisins in boiling water to plump them up a bit. Depends how lazy I'm feeling.

Also loving beetroot at the moment. Delish. Sometimes just a little baby one chopped in 2 & popped into my mouth. Yummo.

I've been having haloumi cheese salad with a little potato salad on the side or a steamed potato sometimes instead of potato I will have 1 piece of toast with home made tomato relish, it goes really well with the haloumi cheese, low fat mixed vegetable frittata, left over beef and vegie stir fry heated up, Mediterranean vegetable cob loaf. I'm trying to get in the 5 serves of vegetables lol.
