View Full Version : I found a coconut ice recipe that works!

I have lost count of how many times I have tried to make coconut ice only to have it end up being a great big pile of gloop in the bottom of a dish.

Well today I made it again using another recipe I discovered and omg it worked perfectly:smiliedance:

For anyone interested here is the recipe:

2 cups of white sugar (not confectioners sugar like most recipes ask for)
1/2 cup milk
pinch of cream of tartar
12 tbspns of coconut.

Method:

On stove top mix together sugar and milk until sugar completely dissolves - (I did this over very very low heat and that took me about 15 mins), you must stir the whole time.

Once the sugar has dissolved add a small pinch of cream of tartar and mix in.

Bring mix to boil for 5 mins (according to the recipe), I actually boiled for 10 - 15 mins though and found it easier.

Take off heat and stir until mix begins to thicken slightly and turn white. When this happens stir in the coconut and you will find that you end up with clumps of the mix in your saucepan now not a runny goop. If you didn't have this happen return your saucepan to the heat for a bit longer and stir like a mad man!;)

Press into a square dish and allow to cool slightly before cutting.

HINT: For those of you who ever have made 'fudge' before you will find this recipe an absolute breeze to make as you want the mix to be the same consistency you would of fudge before you poor the fudge into a bowl. When that consistency is reached add the coconut!

A handy hint also is get a saucer and a teaspoon ready beside you on the bench and when you think you are almost at the right consistency (thickened mix and slightly white) take a small amount out of the saucepan and put it onto the saucer and stir it around the saucer - if it only takes a few seconds of stirring it on the saucer to reach what you are after you know you are almost there.:thumbsup:

Thanks!! Right now i really feel sick thinking of how sweet it will taste lol. But for later i will keep it. I love coconut ice and havent made a good one yet!!

doesnt coconut ice usually have condensed milk in it if so this would be lest sweet then wouldnt it?
