Mexican Beans

This is yummy cheap and nutritious.

1 can refried beans
1 small tub sour light cream
Dash of chilli sauce
1 onion
1 tomato chopped
some red capsicium (optional)
mushrooms sliced (optional)

Fry up onions and other vegies. Add can of bean and chilli sauce stirring. At the last minute add cream but don't boil as the cream curdles just heat it through mixture then serve. It looks yuk but is yum. Serve with rice or toast.

Have you thought of

Spaghetti Bolognase but instead of the spagetti have other pasta shapes.

Patties - beef/chicken/pork - peanut butter or other ingredients mixed in with the mince, form into patties and cook in a frying pan.

With Tuna mornay - Its a basic white sauce with tuna, corn, a bit of potato, cheese and parsley.

Make a beef mince mix with veg and gravy, and then make a pie out of it.

Skewers with rice

Beef/chicken/pork curry

Hope this helps

PM if you want any specific recipes:)

Some quick, easy meals we have:

Toasted sandwiches with spaghetti, baked beans, cheese or ham and cheese, tomato

eggs on toast

baked beans/spaghetti on toast

tuna mornay (Hayley loves this)

home made hamburgers and chips/wedges (just put some seasoning on the chips/wedges)

soup (either home made or from a can)

cheese and fruit platter with dried biscuits

i often use those meal bases you get as they taste yummy and take half the time! Favourites at the moment are Tuscan Meatballs (something abit diferent to spag bog) curry chicken, tomato and herb sausages, i also make chicken parmigana(sp?) just get a chicken breast coat it in breadcrumbs and herbs and cook in the oven until nearly cooked and then put some salsa or crushed tomato on top of each one and some grated cheese and put back in the oven until cooked... YUM YUM!
