that is a recipe i need too. I did have a good one and can't find it!!! so i would love some recipe ideas too! am having bbqing chicken wings tonight so would go perfect! :thumbsup:

For me, a potato salad must be simple: potatoes (boiled and chopped to desired size), Heinz mayonnaise, white balsamic vinegar, salt, pepper and a little chopped parsley.
It's not much of a recipe really (I'm not one for weighing and measuring in the kitchen) as you basically make the dressing by adding the vinegar to the mayonnaise and then adding the rest of the ingredients to taste before mixing into the potatoes.
I know there are loads of variations on the theme (like adding pesto and suchlike) and though they are nice enough dishes in themselves, to me they just aren't a potato salad.

For the traditional creamy salad, I use equal parts sour cream and mayo, plus a little white wine vinegar, plus salt, pepper and spring onions.
For a bit more nouvelle cuisuine salad, i use equal parts red wine vinegar and seeded mustard, a little olive oil, some minced garlic, salt and pepper.

Ingredients
potatoes
grated carrot
finely diced red capsicum
lean eye bacon diced
crushed fresh garlic
extra virgin olive oil
onion, diced
shallots/spring onions, sliced
pinch salt
small dices of tasty/vintage cheese
sliced boiled eggs
Sauce:
low fat sour cream
Heinz 'Traditional Egg' Mayonaisse
Make to taste & quantity you like
How to make:
1.Steam/boil/microwave potatoes (i like steaming them in the bamboo steamer - turn out the best! not full of water like boiling!)
2.Put eggs on to boil
3.While potatoes & eggs are cooking, use olive oil to fry up bacon, onion, shallots and garlic. Set aside
3.Dice capsicum & cheese and grate carrot
4.Mix mayo & sour cream - just do about 1/2 cup-1 cup first - depending on how big a salad you are making. You can always add more sauce if needed.
4. Once potatoes are done, cut into small pieces and put in large mixing bowl
5. Add sauce mix while potatoes are warm & gently mix
6. Add all other ingredients (except egg) & mix gently again
7. Slice boiled egg and place on top (or mix thru if u prefer)
8. Ready to serve!
Is extra yummy if you warm it just before serving!! It is DEVINE!! :smiliedance:

I make mine like this:
Potatoes (amount varies on how many you're making it for), peeled and cut into smaller chunks - cooked until just done.
About 4 hard boiled eggs, quatered
400g bacon, chopped into small pieces, and cooked until crispy.
Good quality mayonaisse (or whole egg mayo).
Combine all ingredients in big bowl. Can garnish with fresh chopped parsley.

mine isnt too flash..lol.. but i think its yummy
spuds chopped into cubes.. some chives. boiled egg.. mayo.. and thickened cream.. salt and pepper.. and thats it :D

Complete agreement with Beany - the only thing to note is that the potatoes should be warm, not cold.
(and any non-brown vinegar works fine - none of this white balsamic nonsense :p)

I don't know if this has been said but boil and chop potatoes as desired then cook up some bacon chop it into pieces chop up some spring onion and when potatoes are cool add all together with sour cream and whole grain mustard my family loves it

I make my potato salad without mayo or creamy dressing (a bit better for the hips and preg friendly). Also great if fridge or esky space is at a premium!!
Baby Potatoes, boiled & chop in half if they are a bit big.
Drizzle with olive oil while warm.
Add sliced spring onions, diced avocado and a handful of snow pea sprouts (maybe add some shaved parmesan cheese too). Season with salt and pepper.
If you are not having to worry about listeria then you can add some proscuitto too.
By the way I do a similar pasta salad:
Boil some plain spiral pasta (or shells or orrechetti), drain very well.
Drizzle with olive oil while warm.
Toss in semi sun-dried tomatoes, olives, sliced button mushrooms, shredded basil and shredded parmesan cheese (the coarse stuff from the dairy case at the supermarket) - all while the pasta is still warm.
Again, if not preg, add some proscuitto or parma ham.
