Hi,
Does anyone have any 'family favourites' they can share.... I feel like every week we have the same old things - meat/fish and vege, a stew, spag bol blah blah! At the moment I am finding it hard to make it interesting as I am also breastfeeding our latest darling so am just being a bit cautious of the 'windy' foods and all dairy food as he may be lactose intolerant (can replace milk OK but haven't found a good alternative for cheese, except fetta, or cream). We are lucky though as our toddler will eat anything. Any suggestions???? Even some easy sauces to add to things?

I have a few family faves I can share that go heaps far, and are rather yum as well.

Chicken Casserole:
4 chicken breast fillets (more if you have a bigger family, this is supposed to be quite a large recipe)
2 cans of campbell chicken and corn, or just chicken, or chicken and asparagus, (depending on your tastes)
1 lemon
1 onion
mushrooms (again, according to taste)

Method
1/ slice onion and mushroom and cook in a little olive oil, remove from pan and put aside.
2. Cut each chicken fillet into 3 pieces and coat in a mixture of flour, salt and pepper, brown each piece in the same pan you cooked the onion and mushrooms in (add a bit more olive oil if needed)
2. Once you have browned all the chicken (it doesnt have to be cooked through, that will happen in the oven) place it in a casserole dish and cover with mushroom and onion mixture, then pour both tins of the condensed soup over the top and squeeze half to one lemon over the top of it all.
3. Cover casserole dish and bake for about 30-45 mins, depending on oven make etc.

This is yummy served with carrots and or rice, not the lowest of fat recipes, but trust me, it is sooo yum, the kids and DH just love it :yes:

Chicken and minestrone soup:
This one is good to use either left over bbq chicken, or you can buy a couple of chicken thighs, chop them up and cook them first instead.
2 rashers bacon
2 cloves garlic, roughly chopped
1 onion, finely chopped
400g can diced tomatoes
7 cups of vegetable stock
1/4 cup or so of risoni pasta
approx 4 cups of chopped vegies (I usually use 1 carrot, 1 or 2 sticks of celery, some chopped cabbage and a medium tin of canned sweet corn)
1/2 small bbq chicken, meat removed and shredded (or cooked thigh, breast, etc)

Method:
1/ Cool garlic, bacon and onion in a little olive oil for 2-3 mins, add the diced tomato and stock, bring to boil.
2/ Add the pasta and vegetables, return to the boil and simmer for 8-10 mins or until pasta is tender.
3/ Stir through cooked chicken and cook for 2 mins, season with pepper to taste.

This is yummy with grainy toasted bread and also freezed really well.

Like rissoles? This is an easy yummy version :)
Spinach rissoles:
2 cloves garlic, crushed
750g beef mince
250g packet frozen chopped spinach
1 egg, lightly beaten
120g char grilled capsicum (although i dont always bother char grilling it)
1/2 cup fresh breadcrumbs
Method
1/ Add garlice to heated pan and olive oil, stir in thawed packet of spinach and continue stirring until excess liquid has been evaporated, put aside and allow to cool slightly.
2/ Place mince, capsicum, breadcrumbs, egg and spinach mixture in a bowl and combine.
3/ Make rissoles and leave in the fridge for 1/2 and hr if you can, this will help them retain their shape.
4/ Cook rissoles till cooked through
We like to have these served on lettuce with tomato relish, they taste real yum that way

I find lots of the recipes that I have come to regulary use in magazine like Womans Day, Thats life, Take 5 and I regulary browse the internet for new recipes to try, but I thought Id put these 3 up for now because they are good economical family type meals, they go along way and are quite cheap.
I will post more tomorrow if you would like.

Hi there..

Home made Fried Rice is a nice change and it also makes for good leftovers/freezing:) It's also easy and quick to cook..

Simply just cook around 2 cups of rice until tender drain it and leave it sit to dry for about 1 - 2 hours

Add some olive oil (or any oil) to a pan make sure pan isn't too small though - (we use a square electric frying pan with a lid which is ideal)

Cook about 4 eggs just like a plain omellette and cut into peices and put aside to cool
then cook about 500g of chicken breast until cooked through (or you could use a cooked chook) Cut the cooked chicken into strips and put aside to cool with the cooked egg.

- You may need to give the pan a quick wipe and add some more oil after cooking the egg and chicken.

Fry 1 onion, until browned
add about 200g of diced bacon until cooked then
add the rice, cooked chicken and egg
mix it through thoroughly for about 3 minutes
add 1 CUP of mixed frozen veggies - beans, peas and corn.
mix them through thoroughly for another three minutes..
turn heat down to warm and put the lid on the pan and let sit for about 2 - 3 minutes.


Serve and add some Soy Sauce - Soy Sauce has kind of a salty taste which gives the rice some extra flavour and it's quite yummy and healthy:)

Note - You can also use different meat if you wish add cocktail prawns or pork instead of the chicken.. you could also add more things to the fried rice if you wanted to.

Coopsntilly, the chicken casserole sounds great - I think I'll give that one a try some time this week.

I ended up cooking it earlier this week - it was very easy and very tasty!
