I am looking for a reallllllllllly EASY recipe for Tuna Morney, I am not the worlds best cook!! So it needs to be really simple, I usually just use the packet mixes, but the one I use to use I can't find anymore, and I am not 100% happy with the one I have. So I thought I would be a good girl and try and make it from scratch :o .

Classic Tuna Mornay

Serving size: Serves 6
Cooking time: Less than 60 minutes

INGREDIENTS

250g short pasta
40g butter
3 tablespoons plain flour
1½ cups milk
1 cup cream
2 eggs, lightly beaten, optional
salt and pinch of white pepper
1 small onion, finely chopped
1 cup grated gruyere or tasty cheese
425g tuna in brine or spring-water, drained
2 tablespoons chopped parsley
½ teaspoon grated nutmeg
juice of half a lemon
1 cup breadcrumbs
30g butter, melted
1/3 cup grated parmesan

METHOD

Bring a large pot of salted water to the boil. Add pasta and cook according to packet instructions. Drain and set aside.

Preheat oven to 180°C or 160°C fan-forced. Lightly grease a 1.5 litre capacity dish.

Melt butter in a medium sized heavy based saucepan. Sprinkle over flour, and cook for about 1 minute or until the flour has lost its raw smell and smells a bit nutty. Gradually whisk in milk and cream. Bring to a boil, stirring until slightly thickened.

Remove from heat and quickly beat in the eggs, if using. Season with salt and white pepper and stir though the onion, gruyere or tasty cheese, the drained tuna, pasta, parsley, nutmeg, and lemon juice.

Pour into prepared dish. Sprinkle with breadcrumbs and pour over melted butter. Sprinkle with the parmesan. Bake for 20 - 30 minutes or until golden. Allow to stand for 5 minutes before serving.

Go to the supermarket, look in the pasta section. You should find a jar of sauce you can just add a big can of tuna to & cooked pasta, cover with cheese & bake in the oven :chef:

Thats how I do it when i'm lazy anyway :laughing:

Here's one i have done from scratch a few times

INGREDIENTS
250gms of low salt butter, cubed
150gms of plain flour
700mls of milk
100gms of cheese, grated
425gms of flaked tuna in spring water

METHOD
Slowly melt butter in a saucepan, then with a wooden spoon, stir in plain flour and cook gently for one minute. Gradually whisk in milk until the sauce is a smooth and thick consistency.
add drained tuna & cheese.
toss the tuna mornay through some fresh cooked pasta and top with mixed chopped fresh herbs, grated cheese and some parmesan flakes. Cover and warm through in a moderate oven.

This may not be a true mornay but it is soooo quick and easy and even our 9month old eats it now (mushed up)!

Can tuna, spoonful tom paste and a few spoonfuls of sour cream, all cooked/heated and served on rice or pasta. Mix well!:chef:

Optional-onion, other veges such as zucchini or capsicum

I am too lazy to go to the supermarket :laughing: ...well its not easy with my two - as you know :p

The things that worry me about both of those wonderful recipes is making the sauce, mine always go lumpy :o

Have you got a stick blender? If it goes lumpy, blend it :thumbsup: (DHs brother is a chef, he told me to fix it that way)

When I make white sauce or gravy, I have found that the key is to just drizzle the water/milk in and try not to break up the ball of flour/butter. If you can keep this whole and just keep adding the liquid, you won't get any lumps-I promise!:chef:

My lazy way:
I melt 2 tablespoons of butter and add 2 tablespoons of corn flour.
Once that's combined gradually stir in a cup of milk.
Now you've yourself a nice white sauce I chuck in a can of creamed corn, stir through then add a can of tuna in brine.
Sprinkle grated cheese over the top and zapp in microwave for 4 mins.

When I'm not so slack I put some steamed potato and broc in the dish first, pour mornay over then after putting cheese on put it in the oven to crisp on top.

I might try one night when DH is around to look after the kids...or save me if it does get lumpy!! :D Another question about your tom paste and sour cream one...do you just put it all in a saucepan and heat it up!! Then put it over the pasta??

Tuna Mornay
Ingredients
Small potato chopped
Small piece of pumpkin chopped
Small piece of sweet potato chopped
Few broccoli florets
180g tin of tuna in spring water
Large pinch of grated cheese
Splash of baby’s milk
½ tsp butter
125g can of creamed corn
Method
Boil or steam vegetables until soft (for older babies roughly mash the vegetables now). In a pot combine drained vegetables and the remaining ingredients and heat gently until cheese and butter melts. Puree for younger babies and serve.
For older kids instead of putting the potato in the Mornay cook it separately and mash. Place the Mornay in a small ramekin or bowl and top with mashed potato and cheese and heat under a grill.

Tuna Mornay
Ingredients
1 Tbsp butter or marg
Plain flour
Formula
Mixed herbs
Tuna in springwater
1 cup cooked Risoni or other small pasta shapes.
Method
Cook pasta according to instructions set aside to cool.
Melt butter in pan, add enough flour to make a thick paste, add enough formula ( or milk if your baby is old enough) to make a white sauce, about 200mls, stir over low heat until thickens. Stir in herbs, Tuna and pasta.
Is great to freeze and can be made with any boneless fish.

wow, isnt it cool all the different concoctions we can make..

mine wouldnt traditionally be called a mornay, because i have omitted the butter/calorie side of the sauce...

i wing everything i make - im not a measurer... but i'll do my best to explain..

diced onion + celery
tspn olive oil to lightly cook, season with salt/pepper
[i make mine sometimes with brown rice sometimes with pasta, so obviously these are pretty much almost cooked previous]
wack a can of cream corn in, stir around,
then the can of tuna, break up a little, stir etc...
then about [a guess] 1/4 cup milk, then stir....
heat thru really well..
serve on rice or throw the cooked pasta in the tuna pot & mix together...

i have had this basic style for a number of years but have adapted it to be healthier each time...
we in fact had it with brown rice last nite, yum yum:chef:

I use the pasta bake sauce that you buy in a jar, called three cheeses think it is.
I boil the pasta, drain, add the tuna and the three cheese mix,
Then cover with cheese on top then bake
It is devine and so so so easy. And I am not kidding my hubby is picky with tuna mornay has to be perfect :rolleyes: and he says it is in his book :laughing:
