Hi there,
This one is really simple and the dates and walnuts are optional. When I exclude the dates and walnuts I call it cinnamon cake and the children say YUM, cinnamon cake!
DATE & WALNUT LOAF
1 cup S.R Flour
½ cup sugar
½ tsp Soda Bi-Carb
2 tsp cinnamon
½ cup chopped dates
½ cup chopped walnuts
2/3 cup water
1oz butter
Sift flour, sugar, cinnamon & soda into bowl. Add dates and walnuts-mix well.
Heat butter and water in saucepan until it just comes to the boil.
Make a well in centre of dry ingredients-
Add hot liquid and mix thoroughly.
Spoon into greased 10’ by 3’ bar tin.
Bake in moderate oven for approx. 40 mins.
ENJOY!!!

make whatever cake you want to, and just substitute
1/2 a large banana (mashed well ) (quick breads, muffins, cakes, pancakes) or
1/4 cup soy yoghurt (for quick breads, muffins or cakes) or
1/4 cup blended silken tofu (for dense cakes or brownies)
per egg
just be careful using the banana cos the whole cake will taste like banana
But just make the cake as per your normal recipe using one of the substitutes
The easiest thing I had at my daughters birthday was a vege and fruit plate, you could have dip if you wanted.. you can buy organic puffed corn depending on the age of the child as to whether popcorn is too dangerous and the best thing is that they LOVED it.
I made a carrot cake for her birthday cake and not one child went hyper from sugar, cos they didnt have any... that would be my biggest tip:D

Plain Eggless Cake
INGREDIENTS:
* 2 1/2 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon baking soda
* 1 (14 ounce) can sweetened condensed milk
* 1 cup orange juice
* 2 teaspoons vanilla extract
* 1 cup melted butter
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch pan.
2. Sift together the flour, baking powder and baking soda into a large bowl. In a large bowl, mix together the flour, baking powder, baking soda. Make a well in the center and pour in the sweetened condensed milk, orange juice, vanilla and melted butter. Mix well and pour into prepared pan.
3. Bake in the preheated oven for 30 to 45 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.
Then top with icing.

What brilliant timing. My son is allergic to egg and I've been wondering what cake I could make for his 2nd birthday coming up.
I'd been thinking of some cheese cake, the no-bake variety made with gelatine.
I want to make a Dora cake though - a sponge cut out into Dora shape and iced, so that last recipe will be fantastic.
And with the Mummy-2-2's suggestions, I can make some cupcakes as well.
