We are now on our third Bubhub bake off! Thanks to everyone so far for participating and/or voting - it's been a lot of fun!
Cupcake did a fantastic job of the swiss roll and has chosen a biscuit recipe for this weeks challenge - it's time to see who can bake the sweetest treat in bubhub!



The basis of this contest is for everyone to bake a certain recipe and to see who can come up with the best looking and most creative interpretation of the recipe. Entrants will post a picture of their creation as a reply to this thread and then there will be a vote done to determine the winners.
The point of this is to have fun in the kitchen. Whether this is your first attempt at baking or you are a champion pastry chef, it doesn't matter. Just go with the flow and share your skills, and creativity, with the rest of the Bubhub.


The Rules

#1. The recipe is to be chosen by the previous winner.

#2. The closing date is to be next SUNDAY night - October 1, 12am AEST. A link to the picture must be submitted via a comment to this thread by this time.

#3. Voting will be done via poll to determine the winner from Monday 2nd October and will close Thursday night - 5th October.

#4. Creativity is encouraged with the recipes, but try and keep it reasonable eg if a chocolate cake recipe is posted, people submitting pictures of their Friday night quiche won't be allowed to win :p

CUPCAKES RECIPE

Makes 15
Ingredients
250g butter, at room temperature
¹/³ cup icing sugar mixture, plus extra, to dust
½ cup cornflour
1½ cups plain flour
2 tsps milk
Passionfruit cream
100g unsalted butter, at room temperature
1½ cups icing sugar mixture, sifted
1½ tblsps passionfruit pulp


Method
1. To make biscuits, beat butter and icing sugar mixture until light and fluffy. Stir in sifted flours and milk and mix well.
2. Spoon mixture into a piping bag fitted with a fluted tube. Pipe 3cm wide rosettes, about 3cm apart, onto greased oven trays.
3. Cook in a moderate oven (180C) for 12 minutes or until firm. Cool on trays.
4. To make passionfruit cream, beat butter in a small bowl with an electric mixer until smooth. Gradually add sifted icing sugar mixture and beat until light and creamy. Beat in pulp to make a spreadable consistency.
5. Sandwich biscuits together with a heaped teaspoon of passionfruit cream. Dust with extra icing sugar mixture.

WHY WHY WHY!!! lol. This is one thing i always seem to destroy when making, i either have it too crumbly or too sticky. But i will give it a shot or maybe i should go down and buy one from the cafe that i had the other day. It was the size of a baseball and oh so yummy! :p

I imagine either would work.

I'm not the best with a piping bag haha! I going to give them all to playgroup on Wednesday so my diet isn't killed.

Just measure exact they will work ;)
Or just hide the bad ones under the good ones & cover them in icing sugar :p

:yes: either one will work.
I think the canned pulp is a bit sweeter.

well i ve bought all the ingredients, when i went looking for icing sugar there was pure and soft icing sugar so i hope i bought the right one i bought soft. will hopefully make them tomorrow, well will try

I just usually buy the cheapest ... but this interests me what the difference is, so I googled it and the CSR site had this

"CSR Pure Icing Sugar is the perfect icing sugar for all your traditional and decorative special icing needs. As CSR Pure Icing Sugar is 100% natural sugar this ensures the icing has a firm setting quality every time.

CSR Soft Icing Mixture is ideal for your favourite cakes and biscuits that need a softer setting mixture."

yeah i read that on the packets and i went with soft icinng as i thought its pretty soft when you eat melting moments

thanks, it was so hard making the rosettes they dont look like they should but ive never attemepted doing that sort of thing before.

O.K I gave it a go. They weren't quite as high as I thought they should be but are quite yummy anyway. I made chocky ones as my kids don't like passionfruit.

OK, fess up ... who DIDN'T use the piping bag :o !!!

I ended up throwing my bag out (I ripped it!) and ended up mixing all the biscuits together again and cheating by roling them into balls & flattening them a little on the tray. My :chef: hat off to those that can make them in the piping bag.

i used the piping bag and didnt give up but if i wasnt making them for the bakeoff i would have just rolled them up and flattened with a fork.

It's all about putting your own creative flair to it & I say all these big cookies are much better than there perfect little one mouthful specs :laughing:

Piping them was very, very difficult! I made mine lemon instead of passionfruit. I mixed in a finely grated rind of one lemon and half the juice from it too.

Okay finally I figured out how to put up pictures;)

I made Orange melting moments instead of passionfruit as I have heaps of oranges here.

Nope, Oscar the Grouch is another person all together - I am still Oscar's mum have been since I joined around 15 months ago;)

I havn't seen Oscar the Grouch around for a while though - but yeah it can get confusing as both her and myself have bub's due in December:p

It's funny though cause there are 4 'oscar's mums' all spelt exactly the same only the apostrophe moved or no space between the words. And their is 1 Oscarsmummy and 3 other users with the word Oscar starting their username! :eek:

Ok - here's my entry! I am devouring my creation as I type (rather slowly - the typing, not the eating :o ).

I didn't use the passionfruit icing (am not a big fan) so I did a vanilla cream icing instead. Yummo!

Thanks girls! I had fun doing it too. :)

Vanilla Cream is 30g (6 tsps) of butter, 1/2 tsp vanilla essence, 1/2 cup icing sugar (sifted), 1 tsp milk approx.

Beat butter, essence and sifted icing sugar in small bowl until light and fluffy; beat in enough milk to make mixture spreadable.

(I found that it was spreadable without the milk so didn't add it.)
