View Full Version : The best roast veg
I know there is more than one way to roast veges. For example usually I just dry roast mine for an hour or so. My mum swears by her large electric frying pan.
So since I'm planning a roast tonight, I was wondering how everyone does their roast veg.
P.S...I'm only interested if, in your opinion, you do the best roast veg.:D

my mil makes the best roast vegies!! she coats the vegies in flour and uses the electric fry pan!! they are so yummy and crunchy on the outside.. but so fluffy on the inside... yumm....

I steam them in the microwave first and then do them in the electric pan. You don't need much oil this way.
I do my potatoes sort of like cobymummy's MIL, it's Nigella Lawson way so it's not nice on the arteries!
I par boil for 5 mins first then toss in the saucepan to rough up edges a bit,
sprinkle some plain flower over and toss again,
then cover with some really hot oil and roast in lots of oil in a really hot oven:thumbsup:

Same as above - but I scrape the outsides with a fork before tossing in a mix of Flour, rosemary, salt and pepper.
And I add plenty of whole garlic cloves to the pan as well because Im an addict :D
How long do veges take to cook if using a frying pan??
i do mine in the oven with lots of italian spices

Frypan takes less time and makes them crispier.. probably only around half an hour for halved potatoes - depending on the setting you have it on.

Hehe you can use any herbs you like - I just love rosemary and potatoes.
I've also used a Morrocan spice mix to sprinkle over them - and thats great as well.
can i ask a really stupid question, but how exactly do you do them in the electric frypan- is there shallow oil, deep oil, no oil? and i am guessing you keep the lid on?
sorry but i have only ever been an oven kinda girl....

Its personal choice how you do them in the fry pan.. I wouldnt do it with no oil - you want them to crisp up.
I use about one cm of oil and add more if I need to.
You may need to move them around a bit every now and then if you dont have a decent non stick one. Although I let mine stick if they decide too - makes that side extra crunchy lol.
and yes with the lid on :D

I do mine in the electric frypan too. I make my pieces of vege about 2 1/2 cms thick, and put about 1 1/2 cms of oil in the pan. I cook with the lid on half the time, then turn the veges, and leave the lid off for the rest. Its the way my mum used to do them, and i love it! Can't stand MIL's way of just dry roasting.....then again, i can't stand any of her old fashioned cooking....:rolleyes: :o she even bakes her steaks in the oven! :barf:

Can't say they were good for the old heart though. Maybe I put to much oil in?
For Christmas I roast my potatoes in Goose fat! You heat up the fat in a tray in the oven - and when piping hot you add the potatoes. Crispy potatoes everytime!

i love jamie olivers roast potatoes - basically new baby potatoes skins on...parboil...toss in olive oil,fresh rosemary and maldon salt (sea salt) and bung in 220 degree oven for 35 mins or so...my husband insists on these...
I also like his roast veggies which is just basically chop up all your fave veggies to equal sizes toss them in different flavourings - for instance carots with pinch of cumin, fresh rosemary and olive oil
parsnips with fresh thyme,honey and olive oil, squash with crushed coriander seeds, hint of chilli, oregano and olive oil.
place in large tray next to each other i & cover with foil in a preheated oven about 220 degrees for 20 mins, remove foil adn cook for another 20 mins or so.
He has other ideas for veggies and flavours but these the only ones I tried....:chef:
I also chuck in baby tomatoes and capsicum that has been tossed in oliveoil, basil and balsamic (sometimes honey too)...
all very scrummy...:smiliedance:

Well ladies, the veges went down a treat. Everone loved them!
Can't say they were good for the old heart though. Maybe I put to much oil in?
This may be a stupid question, but did you drain them on paper towel when done? They tend to be very oily otherwise....Glad they worked though!
Oh, and another tip, if you dry the vege pieces really well (especially potatoes, and on paper towel/tea towel) before cooking, they won't stick to the bottom as bad. :thumbsup:
