DF is going shopping soon and has told me to think of meal ideas for dd1 and I as he starts night shift next week.
So please give me some easy meal ideas, coz I have a mind blank atm.

I'd just cook normal meals and freeze extra portions so you and DD can pick and choose when you're dp is at work and then you don't have to cook every night :)
I would also cook simple things like omelette, pasta with bacon and tomato sauce, grilled chicken breast salads,
freeze vegetable soup in portions that kind of thing :)

stir fry meat and veges with rice
fish fingers with mash and veg
two minute noodles jazzed up with added veges and meat

Things DD and I eat when DH is on night shift are -

Crumbed chicken and salad
Mini Quiche and salad
Mini Pizza
Toasted sandwiches
Fried rice
Lasagna (I made single serve ones to keep in the feezer)
Stir fry
Omlette

DD is 15 months and she eats what we eat every night

Just cook, freeze and reheat, or portion everything up into serving sizes you need. :)

Meatballs is really good.

I buy the mince on sale and i make a huge batch, use however meatballs i need and freeze the rest for other meals.

I also do the same with the jar of sauce or homemade sauce, i just pour half of the sauce into a ziplock bag and freeze it. I get it out to defrost with the meatballs.
