last week i saw a recipie for creamed rice that used coconut milk instead of dairy and now i cant find it. if any one can tell me how to make it be a great help:)
i want to make some for my little terror :laughing:

never actully made it but im pretty sure its quite easy ive made a raspberry one before that was just raspberries and cream and sugar! just an easy one!
all u do is put the raspberries in the bottem of the heatproof dish and pour the cream over the top just evuf to cover them slightly and alittle brown sugar on top and cook for about 10 mins then take oue and flame it but if u dont have a flame just grill it till it bubbles and let cool for 5-10 mins and there u go itll thinken as it cools!

You can actually just cook the rice in the coconut milk with a little sugar and cinnamon. I have tried it this way but you end up using heaps more coconut milk.
But what I do is cook the rice first normally, then drain and rinse it. Put it back into the saucepan with coconut milk,sugar and cinnamon. Cook for about 2-3 mins until sugar melts and its nice and creamy.
Sometimes if I have rice already cooked I just zap it in the microwave with the coconut milk and other ingredients.
Also very yummy cold! :yes:
