View Full Version : Apple Crumble Muffins

I made these this afternoon when I was bored.

I cheated though :crying: and used packet mix muffins :eek:. This could just as easily be done with a regular muffin recipe though!

Next time I would add some pecans or shredded coconut to the crumble topping.

Base:
1 plain muffin mix (packet or your own recipe)

Filling:
6 small apples, peeled and chopped small
2 tbs sultanas (optional)
1 tbs sugar

Topping:
120 grams plain flour
50 grams sugar
60 grams butter
3 tablespoons rolled oats (optional)

Make the muffins according to directions, or mix up your own recipe. Puta generous tablespoon in a greased muffin pan (Mine made 15).

Meanwhile, microwave the apples in a small amount of water for 6 minutes or until tender, drain. Stir through the sugar and sultanas.

Top the muffin mix with a generous amount of apple.

Next, Mix together the flour and sugar and rub in the butter with fingers. Stir through the oats. Sprinkle mix on top of muffin bases.

Bake ina 180 degree oven for 20 - 25 minutes or until a skewer comes out clean.

but, I have just lost 6 kilos :smiliedance: and have 10 more to go :fingerscrossed: .

but I still want them. :p

Oh I'm on a diet too :o I reached lifetime membership at weight watchers 2 weeks ago .

I froze them so out of sight is out of mind!

it is bad enough that I am spending tomorrow cooking for the baked goods stall the p&c is having at the school while the election is on. cookie dough, cake batter, icing, fresh made cookies.... mmmmm.... arrrggghhhh!!!!
