My aunty died last year and left me with her much loved burmese recipes she taught me how to cook them and was so proud that i was able to cook them as good as her.They are so yummy so i thought id share my fav recipe with you's all below is the traditional way to do it but the way my aunty made it was better also you can either serve with rice or noodles.
OHNNOKAUKSWEY TRADITIONAL
· 2 lb chicken · 5 tbsp fish sauce
· 1 teasp salt · 1 tbsp chily powder
· 1 tbsp oil · 1 pc coconut (50 gm of thick coconut milk)
· 3 boiled eggs · 1 lb onion
· 10 tbsp pea powder · 3 lb wheat noodle
1. Chop chicken. 2. Boil chicken and chicken bones 2 quarts of water
3. Add fish sauce and boil for 15 minutes 4. Drain out soup to a container, remaining boiled chicken. Throw away chicken bones.
5. Add oil, salt, chily powder and fry for 5 minutes 6. Add coconut milk and pea powder. 7. Remix with the chicken soup 8. Add 2 more quarts of hot water
9. Add 1/2 lb of quartered onions to soup 10. Boil for 15 minutes in low heat
11. In each small plates, prepare these on table: o Chilly powder o Boil egg and remove shell. Slice. o Thinly slice 1/2 lb of onion, wash in water. Drain water. o Fry dried thick rice noodle 12. Serve noodle and soup in seperate bowls.
MY WAY TO DO IT Ingredients:
2 Onions1 finger length ginger
3-4 pods garlic5-6 table spoons dahl powder(can get it from your local asian grocery shop)
500g- 1kg breast chickenwheat Noodles/rice½ pinch saffron powder(local asian grocery shop)Fish sauce to taste(" ")
1 tea spoon paprika(" ")
1 tea spoon chili powder(" ")
1 tin coconut milk(usual grocery store can use light one)
How to cook:
1.Chop onion garlic and ginger fine.
2.Heat pan on hi until hot and add oil and brown ingredients.
3.Add saffron chili and paprika
4.Add chicken and cook till brown
5.Cover chicken with water add 2-3 splashes fish sauce to taste
6.Mix Dahl powder into paste then add to dish( have to cook powder first until its brown)
7.Add coconut milk mix until a thick smooth texture server with noodles.
I prefer to serve with rice but you can have with noodles
