Every Monday afternoon (from 1pm to 4:30pm) Hayley has kinder, Nathan has a nap around 2pm to 4pm. So even though Nathan is home, I am just left with Skye to amuse. Most days she's happy to just watch a dvd which is fine for me because it gives me a bit of a break and I can do some housework, however I'd really like to do things with her, maybe not for the whole 2 hours, but just spend some time with her because during the week I am able to spend time with Nathan and Hayley on their own (though with them I can take them out, whereas I can't with Skye unless Nathan misses his afternoon nap and then it wouldn't really feel like quality time with just Skye).
So far we do arts and crafts, play outside with a ball (sometimes inside too as long as we just roll the ball), watch a dvd together, play games.,,what else can the two of us do, even for an hour?
Painting, chalk drawing (on concrete?), cubbies, dressups, reading, cooking...

What about cooking?
My 4 and almost 3 year olds love cooking and we make something most days, they love it :chef:
Or gardening? Start a vegie patch togther and she can have her own special jobs to help look after it - and then you can cook together with what you grow together

My 2.5 yo loves cooking. You could just involve her in the housework. My kids love sweeping and vacuuming (I bet they won't in 10 years!).

Make some flubber. Made my kids some in the holidays and they loved it. Just Google a recipe but its just cornstarch and water and some coloring.
Cooking is a winner here
Maybe go for a walk *around the backyard since bub is asleep* and let her take some photos, i got a new camera so i let the kids use my old one. They love looking at them when i load them to the computer.
Print off some pictures and colour them in

The housework? The girls do love helping me put clothes away. I just asked them what they're favourtie thing to do with Mummy is and Skye said 'playing Connect 4' and Hayley said 'folding clothes'
The camera one is a good idea, I have given the kids my old camera (since they dropped it nad now doesn't work ) so she could just pretend to take pictures
