Ladies and Gentlemen, the time has begun for the first Bubhub Bake Off! Put on your aprons, arm yourself with a whisk and stand back from the smoking oven! :chef:
The basis of this contest is for everyone to bake a certain recipe and to see who can come up with the best looking and most creative interpretation of the recipe. Entrants will post a picture of their creation as a reply to this thread and then there will be a vote done to determine the winners.
The point of this is to have fun in the kitchen. Whether this is your first attempt at baking or you are a champion pastry chef, it doesn't matter. Just go with the flow and share your skills, and creativity, with the rest of the Bubhub.
The Rules
#1. The recipe is to be chosen by the previous winner.
#2. The closing date is to be next SUNDAY night - September 3rd, 12am AEST. A link to the picture must be submitted via a comment to this thread by this time.
#3. Voting will be done via poll to determine the winner from Monday 4th September and will close Thursday night - 7 September.
#4. Creativity is encouraged with the recipes, but try and keep it reasonable eg if a chocolate cake recipe is posted, people submitting pictures of their Friday night quiche won't be allowed to win :p

THE RECIPE
Strawberry jelly cakes (http://aww.ninemsn.com.au/article.aspx?id=122753&subsectionname=archive) - Australian Women's Weekly recipe

INGREDIENTS
125g butter, chopped
½ teaspoon vanilla extract
½ cup (110g) caster sugar
2 eggs
1½ cups (110g) self-raising flour
1/3 cup (80ml) milk
80g packet strawberry jelly
3 cups (150g) shredded or flaked coconut
½ cup thickened cream
METHOD
Preheat oven to moderate (180°C/160°C fan forced). Grease deep 23cm square cake pan; line base with baking paper.
Beat butter, vanilla extract and sugar in a small bowl with an electric mixer until light and fluffy. Beat in eggs, one at a time, until just combined. Stir in flour and milk until smooth; spread mixture into prepared pan. Bake, uncovered, about 25 minutes. Stand cake in pan 5 minutes; turn top-side up , onto wire rack to cool.
Meanwhile, make jelly according to manufacturer's instructions. Refrigerate until set to the consistency of an unbeaten egg white.
Cut cake into 36 squares; dip each square into jelly then coconut. Cover; refrigerate 30 minutes.
Meanwhile, beat cream in small bowl with an electric mixer until firm peaks form. Serve cakes with cream.

I've got all of the ingredients so I'm considering trying out the recipe tonight. Is there any chance you could post the photo from the WW Cookbook showing what the end result is 'supposed' :laughing: to look like?
I'm a little confused as to what we're aiming for...:o

I probably wont eat these, but considering they have to be cooked by fathers day....im sure DP would eat em so best of luck to all of uf :D

I know i got all excited at the prospect of this bake off but I have to admit defeat in terms of "I just can't do it this time". I have such a huge week and as I am renowned for undertaking way too many things at one time, I thought I had better bow out now. I will look in on the next one.
Question: Is the poll open to all or just those participating?

hey just a quick question that may seem a bit silly but is vanilla extract the same as vanilla essence??? i have the later but need to go to shop for jelly and need to know if i need to buy extract or whether essence will do the same???? :confused:

I am not sure thw difference, but I have both extract and essence as some recipes say either one or the other. Maybe one is a pure extract of the vanilla bean, and maybe the other is like flavour???? Not sure, but yes they come in different bottles know that much :laughing:

Me: Well, they sound kinda like lamingtons - except they're made with strawberry jelly {describes recipe}
He: Yep, those are lamingtons
Me: ...except that they're PINK!
He: Lamingtons are pink.
Me: No they're not! Lamingtons are made with chocolate! This is Jelly Cake!
He: No, they're Lamingtons. REAL lamingtons are made with jelly.

So anyway, we compromised and agreed it was probably a regional variation. I grew up in Melbourne, and he's a country kid (East Gippsland). But I still secretly know that REAL lamingtons are CHOCOLATE!
(this recipe sounds yummy too though :) )

Vanilla extract is soooo much nicer. its thicker too.

I had that same conversation with my DP, he was educating me on the way of the lamginton in australia. (ive never seen them being an american)

I have made the fake lamingtons :laughing: and they're chilling in the fridge right now. I'll take a pic for my entry and post it later tonight!
Um, I had a blonde moment when making them. I was sifting the flour in and accidentely "sifted" the milk at the same time. oops :o
Ooh i'll have to get the ingredients today, will probably make them tomorrow night when DF is out! :).

O.K. I'll be brave and show you my creations.
I didn't use the jelly cause I try to keep my kids away from pretty colours. :D
Instead I used beetroot juice and icing sugar with some of them and strawberry jam and icing sugar with the others.
The beetroot ones are definately pinker but I think the jam ones taste better. :thumbsup:
It was my first and last attempt at making them. WHAT a mess!! :laughing:

Did anyone NOT use cream? I just had a look and its off :eek: I only brought it on Wednesday - and went off yesterday :banghead:
ETA: Dont worry, you dont need cream its for serving with! :)

:laughing: Thats a laugh. I am NOT eating mine - In fear that I may actually like them.. OMG, talk about disaster! DS decided to take the lid off his Farex container whilst I was bending into the stove to get the cake off, and then I dropped the Coconut container whilst putting it back on the shelf. So now my poor bagless vaccum is full of Farex and Coconut.
They are in the fridge so I could show DF once he got home from work and then they are going to the bin!

here are my jellly cakes.. dh has already eaten most of them.. but it is faters day :yes: .. they are off limits to me, as im trying to be a good girl... but he tells me they taste good, he is keen on the idea of having a bake off each week if it means he gets to eat somthing new, especially cakes!!!

ok, here we go, this might be a bit of an ... unusual ... entry
when I saw the end date I couldn't resist ... it happens to be the day after a certain jelly-lover in my family turned three :D

It was originally sposed to be a pyramid, but we decided that it was actually an Aztec temple, Indiana Jones style, with all the snakes...
Hard to get an even coating of coconut this way - I jsut had to sprinkle it on. Tasted good, but!
