:wave: Hi, I was wondering if anyone knows of a way to make white sauce for vegies etc thats relatively healthy? I was hoping to just use light milk to cut down cals, but I have no idea how to make white sauce in the first place LOL :o

White sauce is easy to make..
1 Tablespoon of Butter/Margerine
1 Tablespoon of Flour (plain or S/raising)
1-2 cups of milk.. you can use whatever sort of milk you want
Melt the butter in a medium pot, add flour and cook for one minute stirring continuously (with a fork or a whisk)
Take off the heat and add the milk in a steady stream - whisking continuously.. when all the milk is blended - put back onto the heat and bring up to temperature until it thickens.
Add some grated cheese, herbs, salt and pepper - or whatever else you want.
If the mixture looks lumpy when you are adding the milk - dont stress.. just keep whisking it and it will smoothen out.
I dont use specific amounts when I cook.. I do everything by look and feel.. so you may need to adjust the recipe to suit the thickness etc to your likings.

First you have to make a roux. You do this by melting some butter (do this on the stove or in the microwave) until it's liquid, then add some sifted flour, a bit at a time, whisking it in to create a paste. The paste is what is known as a "roux".
Then add some warmed milk, a bit at a time, whisking it in. Doing it on the stove is easier IMO, because you can add and stir at the same time while it's being heated. The microwave will do a good job, but me personally I prefer the stovetop. Keep adding milk slowly, whisking it in, until you've got the volume you require. Keep whisking, it will thicken. Then you can add grated cheese, or mustard, or any other kind of savoury flavourings. Salt and pepper to taste.
Voila!!
