Eggless cake recipes?

A friend was complaining the other day about how she didn't have much in the way of cake recipes that didn't have egg in them, and she is allergic to them.:(
So I thought I'd put it to all the wonderful bubhubbers to let me know of any they might have, to pass on to her.:chef:

replace egg with 1 tablespoon vinegar/yogurt(sour one)

One of our favourites!!


DATE & WALNUT LOAF



1 cup S.R Flour
½ cup sugar
½ tsp Soda Bi-Carb
2 tsp cinnamon
½ cup chopped dates
1oz butter
½ cup chopped walnuts
2/3 cup water

Sift flour, sugar, cinnamon & soda into bowl. Add dates and walnuts-mix well.

Heat butter and water in saucepan until it just comes to the boil.

Make a well in centre of dry ingredients-
Add hot liquid and mix thoroughly.

Spoon into greased 10’ by 3’ bar tin.
Bake in moderate oven for approx. 40 mins.
