When a bottle is sterilised do you dry it with paper towel, a clean teatowel or just leave to drain/air dry? Or something else?

I would either leave them in the sterilizer until I was ready to use, or put teats and lids on immediately so they remained as uncontaminated as possible.

I either put mine together and fill with water and put in the cupboard, or I leave them in the unit until I want to use them.

I never wipe them with anything

So it's OK to use them still damp from the steriliser? I have a microwave one that leaves condensation on the parts.

Haven't used them yet, going to in the morning though.

I have a microwave one too. I shake the excess off, then put them together and straight in fridge.

 Absolutely. You can shake them out a little if you want to, but no need to dry them.

Ours arent 100% dry before i put them back together.

Yes, they should be put together & kept in the fridge & re sterilized if not used within 24 hours. According to WHO guidelines.
