Now that it's starting to get cooler, I'm looking for some winter meal ideas if anyone has any veg recipes to share?

Anyone? Just after some different things to have on cold Winter nights. Not that it's even cold yet but I think we'll be in for a few cold nights over the next little while.
I have a really limited cooking repetoire, sorry.
One we make a lot, which is nice at the moment is:
- 1 cup of red lentils
- one can of coconut cream
- 1 tablespoon of curry paste
- load of veggies (pumpkin, sweet potato, potato, carrot, zuchini, onion)
- bit of stock
- water to cover
Just throw it all in a pot and let it simmer until everything cooks.
I made a nice lasagne the other day as well.
The sauce was nothing unusual, just:
- lots of cooked brown lentils
- tomato puree
- onion
- garlic
- red capsicum
- lots of mushrooms (but any veggies are okay)
But I baked two pyrex trays full of large slices (about 1cm thick and as big as possible) of pumpkin and did a layer of that towards the top. It really roasted nicely in the olive oil and went quite sweet. I put some salt and pepper on top of the pumpkin.
I hate making white sauce, but I found one recently that would go well with the pumpkin layer - it was basically a normal white sauce but with a cup of grated pumpkin and a can of creamed corn. If you use soy milk and nuttelex, the whole thing is vegan as well.

Thanks, will have to try that lasagne!
You could put another layer of roast veggies in as well, say eggplant.
So, one layer of tomato sauce, one layer of eggplant, one layer of tomato sauce, one layer of pumpkin and then just sprinkle cheese or drizzle some white sauce on top or something.

We had home made baked beans for breakie today. This is one of our regular winter recipes. (Serves two)
1 x tin cannellini beans
3 x chopped tomatoes OR 1 x tin
1 x diced onion
Garlic, chilli, parika, cumin, brown sugar, salt&pepper, tomato paste, touch of bbq sauce
Basically just sweat down the onions and your spices, pour in the tin of beans and the chopped tomatoes. Plop in a tbsp of tomato paste, stir up with the rest of your flavourings to taste and maybe 1/2 cup water.
Let simmer for ten minutes.
This is awesome on toast but probably good with rice or some other kind of carb also (potatoes, pasta etc).
