I have been making pide lately with mince.
You can either make your own pide bread or buy it. But with the mince, I cook it up with garlic and spinach. Then I add curry powder, ground coriander, cumin. Pine nuts. Fetta. Tin of tomatoes.
Then you put the mince mixture into the pides (oh, spread tom paste in the pides) then bake in oven. So yummy!
Serve with salad or something.... :chef:

Cottage pie is yummy.
Fry an onion some garlic and then fry the mince, put it in a big pot.
Add a tablespoon of cornflour and mix it in.
Get about 500mls of water and some beef stock and pur it in the beef. Cook it up for about 30 minutes. Add some pepper too and maybe 2 tablespoos of wosteshire sauce. The sauce should be thick but still liquidy.
Boil up a cup of peas and add them in too when the mince is finished.
Boil up 4 big potatoes, mash them with butter and milk (make it very whippy/creamy.
Stick the mince in an oven dish and put the mash potato on top. Sprinkle some paprka on top. Stick it in the oven for about 30 minutes at 180C till its brown and crispy ontop.
Deliscious!
you could use it to make tacos or nachos

Mince Cannelloni
1 jar of pasta sauce (bolognaise etc)
Two Boxes of Cannelloni (Tube Pasta)
500 grams of mince
1 onion - chopped
1 tin tomatoes - chopped
Grated cheese
herbs to taste
salt and pepper
Fry onions till tender, add mince and brown, add tinned tomatoes, herbs and salt and pepper.
Simmer until most of the liquid is absorbed.
Let mixture cool down so that you can handle it.
Pour half the jar of pasta sauce onto the bottom of an oven dish
Fill Cannelloni tubes with mince mix (use the handle of a knife to stuff the mix in and fill the tubes completely) and place on top of the sauce
Pour other half jar of pasta sauce over the top.
Sprinkle with grated cheese and bake in moderate (180) oven for 30 - 45 mins

I do the Mince Cannelloni thing too. Except I make it a little more like Lasagne (sp??)
I use the bolognaise sauce with the mince and when it is cooled I stuff it into the tubes. I then pour a cheese sauce over the tubes in a tray, cover with grated cheese and bake for about 30min. Yummy!! All my kids and DH love it. and I even puree some up for my baby...

Mongolian Beef - this is a Kylie Kwong recipe that is actually something quite easy to make!
2T shao shing wine (i used red wine vinegar)
1T soy sauce
1t cornflour
1T ginger
3 cloes garlic
1/2t sesame oil
Combine the above to make a dressing. Mix it with 600g mince and refrigerate for 1 hour.
Shred 5 cups chinese cabbage and add 2t sea salt. Stand 15 mins then rinse cabbage in cold water, squeezing out excess liquid.
FInely slice 1 carrot, half a red capsicum and 3/4 cup spring onions.
Make a sauce with:
2T shao shing wine (again we used red wine vinegar)
2T hoi sin sauce
1T oyster sauce
1T malt vinegar
1/2t sesame oil
Heat oil in wok and stir fry beef, breaking up mince. Add sauce and stir fry for 30 secs.
Add cabbage, carrot capsicum and stir fry for another couple of minutes. Stir in most of the spring onions (save a few to garnish(.
Serve with steamed rice.
Yum! :chef:

My dad's absolute favourite dish made originally by our Chinese servant who was part of the family for nearly 60 odd years.
Tomato Soup Chicken (Originally Called Tomato Sauce Chicken)
Makes approx enough for about 6-8ppl
500gm-750g of Chicken Breasts or Thighs (whichever you prefer) cut into bit sized pieces
2 cans of Campbell tomato soup (you can use other types but this make the sauce to watery)
1 1/2 cans of water
500gms of pasta (shells, penne or spirals, macaroni I prefer penne but my mum prefers macaroni and dad spirals really personal choice)
Grated Cheese
Boil the pasta in some water with a dash of salt.
While the pasta is boiling. Fry the chicken in some olive oil until brown
Add the tomato soup
Use the empty tomato soup containers and put 1 1/2 cans of water into the soup
Bring to a boil and simmer for about 20 mins
Add grated cheese and stir in cheese and simmer for another 5 mins till the cheese is melted
Drain the pasta and add to the sauce
Serve immediately
A slight variation to this which I sometimes do is cut some bacon and fry it witht the chicken, add some mushrooms. Dad also loves it with some italian sausage not too much or it makes it too salty.
We went to my parents for lunch today and mum made this and she only used chicken and some bacon YUMMMO. My hubbie can cook this and its so easy and quick and you can make a huge batch and freeze some. I have be known to use the frozen batch and make it into a pasta bake by just adding cheese and chucking it in the oven :chef:
