Mexican Dinner Party - ideas please

On Friday night I am having friends over for a Mexican feast night, so far I have decided on;
Food
Tacos
Nachos
Enchiladas
Quesadillas
Mexican Layered Dip

Drinks
Margaritas
Tequila
Mojitos

Does any one have any yummy Mexican style salads they could share? And ideas for decorations, we're going all out :D

Hmmmm... mexican salad...

When I've needed to serve a salad or something alongside a Mexican main, I've mixed together "Mexican" ingredients and served it as a salad.

I'd say probably...

Dice some tomatoes, red capsicum and red onion. Mix with some corn kernals (tinned is what I'd do). Maybe add some red kidney beans and baby rocket and corriander leaves.

Dress with a mix of fresh lime juice and olive oil. Mix it all together.

Then I'd put some diced avocado on top too (after mixing, or else it'll get mushed in).

Add some jalepenos for kick if you want.
