cant spell lasanga.. sorry..when i make it the top always goes crunchy.. any tips to make it soft??? more mince??

What are you putting on as the top layer of your lasagne?
With my lasagne my top layer is the lasagne sheet, a layer of mince, a layer of white sauce then a layer of grated cheese. Never cruncy, always yummy!
(now I want lasagne for dinner!!)

you might have to turn the temp down so it doesn't over cook the top. otherwise cover it in foil and take the foil off for the last 15 minutes to brown the top. I make sure that I have a decent amount of white sauce on top and I have found that pizza cheese stays a bit softer then ordinary cheese (sprinkled on top).

thanks for that.. i usually put the sheet on top, and then cheese.. maybe thats where i goin wrong! maybe i should put mince on top then cheese.. ill see how that goes next time... thanks!!

I think the best thing to keep your lasagne luscious is to make sure your mince sauce and your cheese sauce are both nice n' moist. They give the sheets their bendy-ness!:yes:

yum - might try the chicken mince version.
I have a friend who makes the yummiest ricotta and mushroom lasagne too. It's vegetarian (I'm not) and it is so tasty!

Im having Lasange for dinner... Yum.
I make mine sometimes with half pork mince and half beef mince.
I always finish with white sauce and cheese.
I have a friend who doesnt put white sauce in hers, instead she pours 2cups of water over top before she puts the cheese on.

As already suggested by someone, I always put a sheet of tinfoil over the top and only take it off for the last 15 minutes of baking. Our oven is old and dodgy so it's hard to fiddle with temperatures.

Lol i made a huge Lasagne last night and the kids are eating it now for dinner ;)
I usually finish with the cheese sauce and the shredded cheese over the top too. The one time that i put a layer of meat and then the shredded cheese over the top it came out crunchy but that is the only time it came out that way so i am assuming it's because i layered differently to what i usually do lol.

I made two lasagnas the other week for the first time ever. The first was a traditional bolognese lasagna and the second was a spinach and ricotta. For the spinach and ricotta, I mixed 1 packet of frozen spinach (thawed) with a tub of low-fat ricotta cheese. I used white sauce as usual and topped with last lasagna sheet, white sauce and grated tasty and mozzarella.
They both came out great and I am going to try make it once a month as it freezes brilliantly and we get three meals out of each lasagna.
The ricotta and mushroom one sounds brilliant, as does using chicken mince (do you make normal bolognese but with chicken mince?). I think the next two I make will be these.

Just thought I would post the recipe for Mushroom and Ricotta Lasagne if anyone was interested in trying it out :D :
Mushroom layer: Saute mushrooms (large ones, as many as you need - the more
the better because they shrink) in butter and season with salt and pepper.
When they're cooked add one 250ml tub of sour cream. Don't let the mixture boil though. I would just take it off the heat and then add the sour cream.
White sauce layer: only one layer which is one 250ml tub of ricotta or fetta
cheese. While I am pregnant I just make a white sauce and use that instead.
Tomato layer: a tall bottle of pasta sauce.
Layer as follows:
Mushroom mixture on bottom.
Lasagne sheets.
Pasta sauce
Lasagne sheets.
Mushrooms
Ricotta/fetta/white sauce layer
Lasagne sheets
Pasta Sauce
Cheese on top.
Make the lasagne in layers, starting with the mushrooms. Use plenty of
pasta sheets because the recipe has a lot of moisture, and if you don't
it'll just fall apart. Finish with a pasta layer, pasta sauce layer and
then cheese. Bake in a moderate oven for 40 mins or until brown on top. Let
it sit for 5 or 10 mins after taking it out of the oven.

polony - the foil will just stop the top from over-cooking. So it will still cook as normal with the foil on but without the crunchy factor. :)
