Hi all,

As the title suggests, im looking for some inspiration when it comes to recipes.

Im tired of cooking the same rotational recipes week after week.. I have from time to time tried out new things, some of which have now become regular.

Does anyone have a favourite family recipe that they would like to share? We are not overly fussy when it comes to food, although DF doesnt like stirfry.

About the only thing we dont have is a slow cooker...

I have a few favourites in our house that are easy to make, here is one, if I have time I'll pop back in to add more

Chops-

6 forequarter chops
1 can of tomato soup
1 1/2 tablespoons of soy sauce
1 tablespoon of honey
1 onion
1/4 teaspoon of ground ginger
1 teaspoons of Worcestershire sauce

Place chops in a shallow casserole dish.

Combine other ingredients in a small saucepan and cook over low heat for 5 minutes or until well combined.

Pour over chops, cover and bake at 180 degrees for 30 minutes.
Remove cover and allow sauce to thicken.
Cook for a further 15 minutes or until chops are tender.
***** I cook this meal for at least 2-3 hours, the longer you cook it the softer the meat. I like it so the meat falls off the bone.
Serve with mash potatoes and vegies

Honey Soy Pork Chops- Easy as!! :thumbsup:

In a bowl combine:
3 Tbsp tomato sauce
3 Tbsp soy sauce
1 Tbsp honey

and mix well.

Grease a shallow baking dish and lay pork chops flat on the bottom. (I get the really big ones from coles- you can usually get 3 quite large pork chops for around 7 dollars :yes:)

Pour sauce over top, put in pre-heated overn set at 180 celcius. Bake for about an hour.

Excellent with steamed veg and mashed potato or rice (you need something to mop up the extra sauce- so yummy!) :)

I have two for you...the first is a cannelloni which I have been making since I was a Uni student, over 20 years ago! It suits everyone and is extremely delicious! It is low cost, low cal, and vegetarian. The second one is an Indian dish, which satisfies those same criteria, although I have only been making it for about 4 years.

#1 Cheese Cannelloni


I have been making this for a long time, so I don't really have quantities anymore.

Basically, you buy a box of cannelloni tubes, a tub of homebrand cottage cheese, a block of cheddar cheese and a tin of crushed tomatoes.

Mix the cheeses with whatever herbs you fancy and have around, and then spoon them into the tubes. My kids love to help me with this!

Lay the tubes in a baking dish and empty the can of tomatoes over it.

Bake for 45 - 60 minutes in an oven of about 180 - 200 degrees.

You might have to try it a couple of times...I am so practised I just do it by feel:rolleyes:

[B}#2 Spinach and Chic Pea Koftas[/B]
Koftas
2 x packets of frozen spinach from the supermarket – Home Brand is fine
Besan flour – made from chic peas – bought at your local Indian or Polynesian grocer
1 red onion
1 ripe tomato
2 cloves or garlic, or teaspoons of crushed garlic from a jar
1 teaspoon of ground cumin
2 tablespoons of coriander leaves, or a squeeze of coriander from a tube

Yoghurt sauce
1 ½ cups of thick natural yoghurt
4 tablespoons of besan flour
1tablespoon of oil (to cook the spices)
2 teaspoons of black or brown mustard seeds
1 teaspoon of fenugreek seeds
6 curry leaves
1 large onion, chopped
3 garlic cloves, crushed ( or jar equivalent)
1 teaspoon ground tumeric
½ teaspoon chilli powder

THIS IS NOT AS HARD AS IT LOOKS! – once you have the besan flour, fenugreek, mustard seeds and curry leaves in your pantry, it is super simple.

First, defrost the packets of spinach in a bowl. Add all the other ingredients, besides the flour. Then, add the flour gradually, until the mixture is of a consistency that will stick into a ball. Then, make little shapes…they can be balls or sausages or fritter shapes, and fry them in really hot oil. Drain them onto kitchen paper.

Next, we make the sauce. Firstly, mix the yoghurt with the besan flour in a bowl and add about a cup of water; mix this well. Heat the tablespoon of oil over a medium high heat. Add the fenugreek and mustard seeds. You have to let them pop for a couple of minutes like popcorn. Then add the onion and all the other spices. Stir well, and slowly add the yoghurt mixture. When it is simmering, add the koftas to the sauce to heat up.

This dish freezes and heats up well for lunches, and has a very ‘meaty’ consistency, due to the chic pea flour.

Ok, I'm back.... there are a few staple meals we have in our house that are a winner-
(I don't like chilli, so any of the recipes below if they have chilli in the name- it's more like a tang, not a burn otherwise I would make them :D)

Chilli Con Carne-

Serves - 4
Preparation time- 5 minutes
Cooking time- 30 minutes

Ingredients-
500 g lean beef mince
2 tbsp canola oil
1 onion - finely chopped
2 tbsp crushed garlic
1/4 cup of tomato paste
400g can tomatoes,with the juice
1 tbsp of sugar
290g can red kidney beans, drained
Mexican chilli powder to taste

Method:
Heat oil in a large deep frypan on high. Fry onion and garlic for 1-2 minutes

Add mince, stirring constantly until well browned.

Stir in remaining ingredients. When boiling, reduce to low heat, cover and simmer (cooking gently at a level where tiny bubbles rise to the surface) for 20 minutes. Stir occasionally.

Serve over baked jacket potatoes (or rice/ taco shells or burritos)


I just experiment with recipes I find online, some work, some don't!!
