What should I make - Fresh Spinach

I have a whole bunch of fresh spinach. not sure what to do with it though! So many great things to make, I can't get my head around it. So throw some ideas at me Hubbers :)

You wrote pastries :) I was just saying that my first thought was making some creamy pasta sauce with it but that won't be very kind to DD who has already said she's kind of sick of pasta for now :laughing:

Spinach and ricotta pastry rolls.

Just cut up some spinach, some onion, sweat them off in the pan then add them to a bowl with some cheese, ricotta and some salt and pepper and roll it on to some pastry and roll up like a sausage roll.

Or you could do spinach and pumpkin risotto
