I would really like some recipes for soup, i don't normally eat soup until recently. but because its a cheap meal and i am trying to lose weight and soup is good for losing weight i thought i'd give it a go.

* Leek & potato soup *
2 leeks (thoroughly rinsed)
3-4 potatoes
4-6 rashers bacon
Lge can creamed corn
Chicken stock
Finely slice leeks, dice bacon, peel and dice potatoes (about 2cms x 2cm).
> Fry leeks and bacon in pot until leeks are soft and fairly well cooked.
> Add potatoes and mix well for a few mins.
> Cover with chicken stock, and simmer until potato is cooked.
> Stir in a large can of creamed corn, and heat through.
>> Serve with crusty bread.

Morrocan beef soup:
1 potato
2carrots
2sticks celery
1zuchinni
1large onion
1beef stock cube
1jar passata
1.5litres water
1tbs cummin
1tbs turmuric
1tbs Garam masala
1tbs chilli flakes
1 jar chick peas
500 diced beef
1 tsp garlic.
in a stockpot brown onion, zuchini, carrot, celery, potato and beef until very brown.
Add turmuric, garam masala, garlic and cumin and dry fry. (add a little oil if it starts to stick)
add chilli flakes, chickpeas and stock cube. (i keep the juice from the chickpea can in the soup, it thickens it a bit) let simmer for a few minutes, then add the water and salt and pepper to taste. boil this for about five minutes then add the jar of passata and some more salt/pepper to taste. let simmer for 30-mins- 2hrs... the longer you leave it the yummier it is and the more tender the meat.
this is my absoloute FAVOURTIE soup and i could eat it all day and night and never get sick of it!! i make a couple of batched a week in winter!!! so cheap and yummy. serve with crusty fresh bread :D
* Pumpkin Soup *
Wedge of pumpkin
4-6 bacon rashers
1 onion
chicken stock
Nutmeg and pepper to taste
> Fry diced onion and diced bacon in pot.
> once cooked put in pieces of peeled pumpkin.
> cover with chicken stock, add pepper and mutmeg to taste, and simmer until pumpkin is cooked.
> blend up til thick and smooth (you might not need all the liquid, so best to ladle some out before hand and add it at the end if needed.)
>> serve with crusty bread and a dollop of sour cream.

CHICKEN AND SWEET CORN SOUP (like you get at the chinese restaurant :) )
Ing:
1 x BBQ chicken, broken up, skin off
1 x 45g Packet Chicken Noodle Soup
1 x 440g Can Creamed Corn
6 Spring Onions
1 TS Soy Sauce
3 cups water
2 Eggs, beaten
Method:
Place Chicken, Soy, Water, Corn, and Soup Mix in saaucepan
Bring to the boil, stirring
Reduce heat and simmer for 15mins
Take off heat and stir in Eggs
Sprinkle with chopped Spring Onions before serving.
SO easy, so SOOOO yummy!!
