My favourite are "cake cookies" (from bestrecipes website).
Cake mix (any, I usually use the cheap ones from iga or woolworths, just plain chocolate or vanilla)
60 mls of vegetable oil
2 eggs
Mix it together, add whatever you want (ie choc chips, coconut, jam - anything), put into balls and back for about 12 minutes. One mix makes about 24 upwards, depending on how much extra stuff you add. Oven should be 180 c.
They are the best and loved by everyone in this house - and seriously 20 minutes from thought to table :)

Chocolate cake
1.5 c plain flour
1t bicarb soda
1/3c cocoa
1c caster sugar
5T veg oil
1t vanilla essence
1T white vinegar
1c cold water
Mix the dry ingredients make three wells for vanilla, vinegar and oil and add individually. Pour water over the top, mix and bake at 180 until cooked. Can be mixed in the cake pan if you want. Makes great muffins too.
CHOCOLATE CHIP & COCONUT SLICE
1 cup Self Raising Flour
1 cup Coconut
3/4 cup Chocolate Chips (I use Woolworths Home Brand)
3/4 cup Sugar
1 cup Milk
Combine all the above ingredients in a bowl, add milk last. Line a lamington tray with Glad Bake. Bake at 180c for 30 minutes or 27 minutes in a Fan Forced Oven.
Enjoy.
THis is like a lamington in a slice, it is soooo yummy and easy!
Muffins are a sure fire hit in this house!!
I make huge batches and freeze them down.
I usually use 1kg:eek: S/R flour, about a cup of oil,2 eggs and add milk as I need-until mixture is wet(dont over stir muffin mix as it goes tough and chewy!) salt, and all purpopse seasoning
Then add ham/bacon,grated carrot and zuchinni, cheese, onion.
I do the same mix for sweet muffins, but add a cup of oats, cup of sugar, cup of choc chips,3 mashed bananas.
