View Full Version : Easy Chicken & Sweet Corn Soup

Does anyone have a real simple recipe for chicken and sweet corn soup they want to share :D

I( used to have one which was just i roast chock, tin of creamed corn, some chicken stock, noodles and eggs, but can't remember if that was everything but I know DD loves it and would eat almost the whole lot :yes:

Go to Coles, go to the soup aisle and grab a can LOL.

On a serious note, I would search "Chicken and Corn Soup BBQ Chook" and see what you get.

That's what I usually do but thought I'd be good and start actually cooking again, also for me to get any I'd have to buy about 5 tins cause she doesn't stop eating it :laughing:

And yes have had a quick google and few I think may be it.

pkt Chicken Noodle Soup ( use low salt)
(or 1litre of chicken stock and some noodles)
1 can of creamed corn, or you can use a can of normal corn and put the bamix in it )
1-2 chicken breasts chopped
(or you can used shredded BBQ Chicken)
1 Table spoon Soya sauce
1 Egg beaten
some spring onion chopped to garnish


Make up the chicken soup and add the chopped chicken breast and bring to the boil (bring the soup to the boil first if your using BBQ Chook)
add in the corn, bring back to a simmer until the chicken is cooked. Then add the soysauce. Bring back to the boil and whilst its boiling, pour in the egg, stirring rapidly with a folk so that it makes lovely shreds of egg throughout. Add s bit of onion to garnish..
Done!!

Hmm tinking about it...it might just be a teaspoon of soy sauce. .
I just put in a dash and taste ans go from there. It does make all the difference though.
Yeah it's very easy. Scarily enough the local cook at the local Chinese told Mum to make it this way.

SOme people add in some peas as well. I throw frozen vegies into DS (to cool it down as well) and he laps it up. If we didn't have chicken lastnight and for lunch I'm tempted to make some now for tea..LOL
