Baby Cereal Biscuits
2 tablespoons shortening
1/2 cup granulated sugar
1 egg
1 teaspoon baking powder
1/4 teaspoon salt
1 1/2 teaspoons vanilla extract
1 teaspoon water
1 1/2 cups baby cereal
Preheat oven to 300 degrees F.
Cream shortening and sugar. Add eggs, baking soda, salt, vanilla extract and water. Mix until well blended. Gradually stir in cereal. Knead until smooth. Pat into rectangle. Cut into 12 (1-inch) bars, smoothing edges so they will not be sharp. Place on ungreased cookie sheet. Bake for 20 to 30 minutes or until dry. Store in uncovered container overnight.
i found that on the site linked :) but what is shortening?

shortning is fat.. so usually butter.. you can get margarine alternatives that are 100% dairy free.. or you could use a little bit of olive oil instead..

would olive oil work in that recipe? are there dairy free and soy free margarine/butter alternatives in supermarkets?

shortening you would need to use copha which is next to the butter. It is different to butter and olive oil, It is what makes chocolate crackel set. I do think it is that expensive to buy, but musli bars use it a lot.
an other idea is to make a rice pudding using coconut milk and sweetening it with apple puree or something like that. all you need to do is just cover about a cup of rice and as it absorbs the liquid start poring in the coconut milk turning the heat down to a simmer. keep adding the coconut milk till it is the consistancy of porrige, but it will thicken as it cools. normally you would sweeten it will a little sugar but apple juice or puree would work.:shame:
