I've got risotto on the stove, and we forgot to get groceries today lol.

So I have chicken stock with the arborio rice on the stove as we speak.. and I have peas..

What herbs/spices will go well with chicken stock, risotto and peas? I have a bit of fresh parsley and my usual dried herbs but seriously our cupboard/fridge is almost bare!!

Doing our online shop TONIGHT!!!! :laughing:

Parsley sounds good.
Maybe thyme?
Do you have white wine? That would add some extra yum to it.

Garlic if you've got it and the parsley as well and chuck in some white wine too if you have it :chef:

Bummer.. too late for the garlic.. I thought of that too once it was too late and the risotto was already on :rolleyes: might put some garlic granules instead :laughing:

Haven't got any wine :( boy I feel like some too!!!

How about some parmesan, or even just some tasty cheese at the end?

Never too late for garlic.
Basil always compliments chicken stock.
A bit of lemon juice might freshen it up.
Any cheese?? A bit of cheese would be nice.

I realise cheese isnt spices/herbs but always adds a bit of yum to risotto :D

you can put the garlic in while its cooking.. i often do... i actually prefer it..

tyhme, orogano, lemon zest/juice,

instead of wine you can put a bit of vinigar...

do you have anything tinned; like any beans, or tomoatoes, or corn or any other vegies? any chesse.. any carrott?


onions? fry them seperately in a pan and sprinkle them over at the end..

I was thinking cheese too! I love parmesan in risotto, usually I make a mushroom & cheese one but don't have mushrooms and only Colby cheese!!!

Do you think colby would go? It's quite a distinct taste.

yeh i would put some in... at the end.. just put it in too taste and maybe lift it with a bit of lemon juice...

hmm.. u are making me want broad bean risotto!

OK it's almost done! It has: garlic, lemon juice, parsley, dried basil, along with the stock, peas and arborio rice..

Then just gotta add some cheese :D
