does anyone have a yummy quiche recipe they would care to share please??!!!

Ingredients:
Puff or Shortcrust Pastry
5-6 eggs (depending on size)
Salt and Pepper to taste
300ml thickened cream (can be light)
1/2 cup milk
150g diced bacon/shredded ham
2-3 shallots, diced
3/4 cup shredded cheese
sliced mushrooms (optional)
sliced tomato (optional)
Method:
Line a greased (cooking spray) quiche dish (or similar) with pastry.
In a bowl, beat eggs with salt and pepper. Add cream and milk and beat again. Add bacon/ham (can cook beforehand if you want), diced shallots, cheese and mushrooms. Pour egg mixture into quiche dish. Top with sliced tomato if you desire. Cook for about 40 mins in a preheated 190 degree oven.

I just mix together some eggs, milk, cheese, a little bit of plain flour as the basis of a quiche. To that i add prawns, seafood extender, corn, peas, chopped tomatoes, chopped onions, asparugus, spring onions and anything else i feel like throwing in! Some times i use puffed pastry but most of the time i don't use any pastry at all and leave it as a crustless quiche.

Impossible Quiche (no pastry)
Ingredients
3 eggs
1/2 cup SR Flour
1 and 1/2 cups milk
1/2 cup melted butter
1 cup grated cheese (to sprinkle on top)
1/2 cup bacon or ham diced
2 small tomatoes
2/3 shallots or small onion
Salt & Pepper to taste.
Method
Beat eggs, add other ingredients except cheese (to sprinkle on top). Mix together. Pour into greased pie dish. Microwave 5 min on high then 10 - 15 min med (may need 20 mins depending on microwave)
NB: Can add other ingredients to taste. I usually add half can of corn and 2 tablespoons of corn relish.

My daughter wanted scrambled eggs like they make at kindy....but I could never make it the same, she would not eat normal scrambled or even omlette, but realised it was probably quiche that she was talking about, because she said sharleen used to cook it in the oven!!!! AH HA!!
