My partner and I are wanting to make some bread by hand.
We have tried about 20 different ways and none of them turn out.
They don't seam to raise enough and are to doughy.
Any tips
any full proof recipes?
any advice at all would be appreciated.

I don't have a breadmaker and I knead the bread myself! I find it quite therapeutic!
I have a great recipe!
1/2 cup warm water
1/2 cup warm milk
1 tspsn of sugar
2 tspns of yeast
Mix together and leave to bubble for about 5/10 mins
Meanwhile:
Sift 2 and 1/4 cups of plain flour (I use a mix of wholemeal and white and often add some LSA - Linseed Soy and Almond). Add a good tspn of salt. Rub 40g of soft butter through the mix
Add the yeast mixture, mix with a wooden spoon until combined then turn out onto a floured surface and knead for about 10 mins until smooth and elastic. Leave to rise in a greased bowl covered with a teatowel until doubled in size
Turn out onto floured surface and knead for a min or two. Make the shape you want (I usually make an oval shaped loaf - NO TIN), make a few slashes across the loaf with a knife or a pair od kitchen scissors and sprinkle with some plain flour, leaving to prove for about 10/15mins
Preheat oven to 220 C and cook for about 25mins then turn down to 180 C and cook for another 20 mins.
Tap to see if hollow sounding. If so, it's ready! I often leave it in there with the oven off so it gets a little crustier!

This bread is amazing, it is unbelievably easy and tastes soooooo great warm with butter and golden syrup/honey.
Watch the video. First time making it I used his 1 tbsp of salt- too salty! Try 2 teaspoons. I also used course grit semolina rather than the cornmeal.
No need for bread flour, plain old white wings works, the amount of yeast is so tiny.
I have a camp oven (dutch oven) but have heard that any old pyrex/casserole dich with lid is fine.
