Yum - chicken!
How about a bbq chicken pizza. Whack a bit of bbq sauce on there, olives, sun-dried tomatoes. I'm hungry.....:D

If you have vegies that are leftover you could blend it all up, heat it up on the stove and make a soup. My MIL does that with her leftovers from a roast. it's yummy!

I saw this yummy looking soup recipe on better homes and gardens where you put roast chicken meat in it.
It had fennel, carrots, celery, onion, garlic oregano, thyme and a bay leaf, cook in 2 ltres of chicken stock and 1 ltre of water. then you add some pasta and rice and the roast chicken meat! ?Sounds yum i might try it next week!

BBQ Chicken pizza is great!
Stir frys are good too, or shred it and put it in your pasta with the mince too :o

I make a potato bake, with all the usuals- potatoes, onion, zucchini, sweet potato and cream- but just use shredded chicken in the layers.

I would make either a soup, pizza, pasta bake or alternatively a risotto - just add your fave vegies (eg spinach, mushroom) and the chicken at the end....very yummy, quick and easy!!

Tonight I have decided to make a pasta dish with the left over roast chicken. I'll post my recipe below incase someone wants to try it....... :)
Dice onion, garlic, bacon and gently fry. Add chopped mushrooms, fry until soft. Beat 250-300g sour cream and one egg yolk together then add to other ingredients. Season with salt, white pepper and a little curry powder. Add some peas, corn and about 1/2 cup of chicken stock. Throw in diced roast chicken. Combine all ingredients with some precooked pasta (I used Coles Lasggnette). Put into a oven dish with grated cheese on top and into the oven until cheese is melted.
We haven't sat down to eat it yet, but I taste tested before the oven and it wasn't bad at all :thumbsup:

We usually do toasted chicken and cheese sangas for lunch the next day, then we use the rest with a tomato based sauce for pasta. That usually takes care of it :thumbsup:

Cook 500g fettucine, meanwhile pour 300mls light cream and a tin of pumpkin soup (I use the condensed one) into a saucepan and stir on low heat until heated and combined, then add 1 diced red capsicum and 2 or so cups of diced/shredded cooked chicken, stir till heated through then drain pasta, and put pasta in bowls. Spoon pumpkin mixture over pasta then top with diced avocado, pepper and herbs if desired. yummo :chef:
If you dont have capsicum, some fried bacon and onion also works well :yes:

hi wondermum - just thought I'd let you know that I gave your chicken bake recipe a whirl last night with a couple of alterations to suit what I had in my fridge/cupboard and it was yummo!
I fried up onion, garlic and sliced carrots in the frying pan and then added diced chicken breast.
Browned it all and then added in a packet of cream of chicken soup mix with about 700ml of water and a sprinkling of curry powder and a tiny bit of salt. Then I put in about a 1/4 cup of tinned corn kernels.
Then I mixed it through with cooked small pasta shells and some boiled potato slices.
Put it all into a baking dish and sprinkled pizza cheese on top and then browned it in the oven for 20 mins.
So good! Thank you for the inspiration. :) DS (18 months) and hubby loved it too.
