OK, so I am NO cook. I manage a half decent spag bol, and packet cake is a stretch.... but I would like to make mini quiches/mini egg and bacon pies as DS loves loves loves them.

Can anyone tell me - do I just use the regular recipe for quiche/egg and bacon pie to make minis? Or should I do something differently? And I was thinking I should use a mini-muffin pan to cook them? Is that right??

And do you have a good recipe for quiche I could borrow please? (have googled it, but would love to know what your children might like).

If I get reincarnated, I'm asking for some kitchen skills next time.....

I make my mini quiches in a muffin tin like you mentioned. For the bases I usually use puff pastry, cut them into big enough to fit, then mix up what ever you want to add to then, obviously egg, salt, pepper, little bit of milk, cheese, bacon, onion, sometimes I add, tomato, capsicum, peas, and corn for a more 'grown up' quiche.

Oh and cook until they have risen and going gold on top :D

Thanks singlemumma82!

I won't be releasing my own cook book any time soon, but at least I can start trying something new now!

(or maybe I will release my own cookbook but it will be very very thin..... cover, title page, and that's it...lol)

I cook them as singlemumma82 does them, but I also wanted to add that I blind bake my puff pastry before I put the egg mixture in. I put the pastry into the muffin tins then put them in the oven on 180 degrees until it 'puffs' up. It stops the bottom of the pastry being soggy and floury tasting
