View Full Version : A Birthday Cake Recipe for DP needed...

Hi Everyone

It's DP's birthday on Friday and instead of being lazy and buying a cake, I am going to make him one.

He said something about a sponge cake when I asked him what kind of cake he wanted, but I have no idea on how to make a decent sponge or how to decorate it (without it looking like DD did it :laughing: - nah I'm not that bad ) or what to fill it with.

Last year I made him a double chocolate mud cake (layers of white and milk chocolate mud cake) and filled with hazelnut mousse - very rich but very yummy.

He's not very fussed on fruit so I cant decorate with fruit. He likes cream, but I dont just want to slap some cream on a sponge cake - I want it to be special lol.

I would really appreciate any ideas :D

My DP's family have a wonderful sponge cake recipe that is tradition in their family. DH is making the sponge for DS's 1st birthday party on Saturday. I'm doing a layer in the middle of raspberry jam and whipped cream and then decorating it with whipped cream with Sesame Street figurines and sparklers on top and perhaps his name written in smarties. You could also break up a flake and sprinkle that over the cream. I'm a bit old fashioned with sponges and couldn't imagine decorating them with anything except cream. You could put food colouring in the cream and pipe it on in a multi-coloured extravaganza, lol.

This is a fantastic recipe that came from DP's Nanna - my DP bakes the best one ever!

4 eggs (room temp)
3/4 cup caster sugar
1/2 cup cornflour
1/2 cup custard powder
1 teaspoon cream of tartar
1/2 teaspoon bi carb soda

1. Cream eggs & sugar (really well!)
2. Sift remaining ingredients 3x over
3. Fold the sifted ingredients into the egg mixture till blended (don't over-fold as it makes it lose the air, so it won't rise well)
4. Pour into a greased tin and bake 25-30 mins on 170 degrees (fan forced oven).

When cool cut the sponge through the middle so you can spread some jam inbetween. Put the top of the cake back on & cover the top with whipped cream and crumbled flake (chocolate). Yummo! :chef:
