i made it the other day and it was delicious! i read a heap of recipes then just ended up winging it and making a combination of them all...
I did something like this:
4 tomatoes (boiled them for like 2 mins (in boiled but turned off water), removed skin, removed seeds and juice, diced)
basil (chopped finely) - not sure how much, couple of good pinches
balsamic vinegar - just poured a fair bit in (go by taste)
salt and pepper
finely shaved parmesan
1 red onion diced fairly roughly
1-2 teaspoons crushed garlic
french stick
olive oil
mix the garlic, balsamic, basil, salt/pepper, little bit of parmesan, tomatoes and onion, then put it in the fridge for like half an hour
put some olive oil on the cut french stick pieces, whack them under the grill
then serve as you do and top with shaved parmesan!
i think that's about it... i didn't write anything down, that's from memory! but it was YUMMO!!! i want it right now mmm

It's really yummy (I add the red onion). Also you don't need day old bread... I just use the baguette type bread sticks from coles. Really good!

MY bruschetta is the bomb diggety!
I use the Pane de Casa bread from the bakery.
In a bowl combine...
1 ripe avocado
1/2 cup chopped basil
1/2 red onion
2 tomatoes
Balsamic vinegar, olive oil and salt to taste...
Toss it all around,
I put it on the bread after I have fried it on both sides.
