Any kind of Mexican food... just add heaps of chilli!
(nacho's, chilli con carne, taco's, burrito's)

Haystacks

It's not really HOT but it's a little on the spicey side with the Mexi chilli beans

Corn chips
Mexican chilli beans (heated)
Lettice (shreeded)
Tomato (diced)
Avacado (sliced)
Cucumber (cubed)
Carrot (grated)
Cheese (grated)
Sour cream lite (dollap or two)

Arrange corn chips on separate dinner plates. Spoon on warmed Mexi chilli beans. Top with salads, grated cheese and then sour cream.

Very easy and healthy and no messy pots to clean!

We eat hot food all the time - it really is a case of just adding chillis to regular food.

When we make pizza, we have chilli in the tomato sauce to give it some kick and use pickled jalapenos as if they were a vegetable for the topping. Our bolognese sauce always has a couple of red chillis chopped into it. There's really barely a dish that DOESN'T contain some chilli - there has even been chilli and apricot ice cream ...

Have to agree with Beany here.... I just add chilli to any sort of meal Im having if I want it hot..

I'm even known to add chilli flakes to caesar salads :D

I add it to gravies, sauces, mashed potato, baked beans, .. anything else with a liquid that will take on the flavour.

Oooh - fried(ish) chicken! ("ish" because we went through a bit of a diet overhaul a few years ago and I decided that fried chicken was just too calorific to justify but this way tastes as good and makes it slightly less naughty)

250g of chicken thigh fillet, cut into chunky strips
one egg
3 tablespoon of plain flour
half a teaspoon of mustard powder (Keens)
a teaspoon of chilli powder (or less according to taste)
half a teaspoon of dried chilli flakes
a little garlic powder (to taste)
Salt
Pepper

Mix all the dry ingredients in a dish. Beat the egg in a separate dish. Dip the chicken pieces into the flour, followed by the egg and then into the flour again.

Using an olive oil spray, lightly coat each side of the floured chicken and a wire baking rack. Cook in a hot (250') oven for about half an hour or until crispy and brown.

Serves two when served with coleslaw or potato salad. It would be even more fiery if used as a starter and served with a range of hot sauces.
