:wave: Hello all the budding chefs out there!

Does anyone have any ideas on what to make with leftover roast beef. We had one last night and I'm bored with using it up in fritters and I don't have a pasta bake jar in the cupboard. Anyone got any exciting ideas??

I aways use left over steak or roast beef in a stew. Just chuck it in with some vegies, stock, a little bit of gravox and/or curry powder, simmer away and Voila!

Make a risotto and slice the roast thin to serve on top.

If you have gravy you could have hot roast beef sandwiches. Get some lovely thick slice bread, toast it slightly, lay your sliced beef on top and smother with gravy. Could add fried onions/garlic with the gravy too. Serve with veg on the side.

Similar to the stew idea, you could make meat pies. I do this with left over chicken. Any meat pie filling recipe will do. I'm too lazy to make pastry so I just use frozen puff pastry for bottom and top in a regular pie pan.

Ingredients:
1 ounce Butter
1 Finely chopped Onion
1 pound Cooked and mashed Potatoes
8 ounces Cabbage
6 slices Beef, cooked and finely chopped (optional)

Directions:
Melt the Butter in a large frying pan Add the Onion and fry for a few minutes until softened, stirring frequently Add the potatoes and Cabbage, if you are including the beef, add this as well Fry over a medium heat for 15 minutes until brown then serve

This classic dish originally contained beef along with the left over cooked potatoes and cabbage, though today people don't generally bother with the meat. The name is apparently due to the sounds that are emitted

during cooking, the vegetables bubble as they are boiled and then squeak in the frying pan.

I do bubble & squeak too. Chop all your leftovers - meat and veg - into small bits and fry up in copious amounts of butter and cabbage. Yum. Just keep 'stirfrying' it until the cabbage is tender.

We do pizzas with leftover roast meat - buy a good quality pizza base (or make your own lol), spread with Napoletana sauce, and add whatever toppings you'd like - our faves are feta, sliced capsicum and mushrooms....mmm....and Libby likes to eat them too - picking the pieces off the top.

Or, another fave is to make a salad - just your usual lettuce (or mixed salad leaves), red onion, cucumber, celery, add cubes of feta and kalamata olives, then roasted pieces of sweet potato and cherry tomatoes, and finally warmed slices of your roast meat on top. Again, DD loves to pick her way through this concoction.(We had it for dinner last night as we had roast lamb on Sunday night :thumbsup: )

I like to do a roast beef Thai salad....

Noodles, Baby Spinach, Red onion, grape tomatoes, sliced beef, capsicum and Thai salad dressing....yummo

Beef Paste for sammies

Blend it with whatever 'tangy' (oyster sauce, mayo?) sauces you like, a little lemon juice and maybe spices and use as a sandwich spread - yum yum!

hey!

i make a curry type rice thingy, the recipes on the back of a rice pack i buy, you cook onion, garlic in a pan, add rice, curry and other spices (chilli here), then add water to top of pan, simmer until rice nearly cooked, add 4 chopped tomatos and the shredded roast meat, some cashews mmmmm yum!
