I'm after some muffin recipes to keep me busy and occupied with. Savoury or sweet, I don't mind.

That is so funny, because just before I was thinking the same thing...I'm craving choc chip muffins but want that really good muffin texture, like the ones you buy!
Can anyone help us pleeeeease??!! :D

These are great (and easy!) - I promise!

250gm plain flour
2 teaspoons baking powder
1/2 teaspoon bicarb
2 tablespoons cocoa
175 caster sugar
150gm choc chips, plus more for sprinkling on top
250ml milk
90ml vegetable oil
1 large egg
1 teaspoon vanilla extract

Preheat oven to 200 and put 12 paper cases in a standard size muffin tray.
Sift together the flour, baking powder and bicarb. Add in other dry ingredients.
Mix together wet ingredients.
Mix both together until just incorporated.
Spoon into cases and sprinkle more choc chips on top.
Bake for 20mins until dark, risen and springy.


There is also a great recipe on taste dot com for raspberry, macadamia and white choc chip muffins that are absolutely scrumptious!

DATE AND PEPITA MUFFINS

1 cup chopped DATES
1/2 cup SUGAR
1/4 cup OIL (Canola/Olive)
1 EGG
1 cup YOGHURT (I use Vanilla)
2 cups SR FLOUR
1/2 cup Pepitas

Mix together. Pour into Muffin tins (makes about 12). Bake @ 180-200.c for 15-25 mins:thumbsup:

They are awesome!!!

Also variations...

BASE
1/2 cup SUGAR
1/4 cup OIL (Canola/Olive)
1 EGG
1 cup YOGHURT (I use Vanilla)
2 cups SR FLOUR

I add two mashed bananas or grated apple, and some cinnamon.

Also minus sugar, add sundried tomatoes, feta and bacon for savory. Oh and I use natural yoghurt for savoury, I also use marianted feta and use oil from feta in mixture, instead of plain oil.

Also with yoghurt, it may be more/less a cup depending on brand and other ingredients. Needs to be thick batter.

Basic oatmeal muffin:

1 cup milk
1 cup quick or instant oatmeal
2 tbsp butter

Scald the milk (I do it in the microwave, on high for 1 min to 1.5 min). Stir in the oatmeal & butter. Set aside to cool.

Mix together in a large bowl, and make a well in the centre:
1 cup wholemeal flour
1 tbsp baking powder (or use self raising flour & omit the baking powder)
1/2 cup brown sugar
1 tsp salt

Lightly beat one egg. Add to the cooled oatmeal/milk mixture, and quickly stir it into the dry ingredients. Batter is ok if it's lumpy, you don't want to overmix it or the muffins will be tough. Spoon into a greased muffin pan (or use paper liners) filling each 2/3 full. Should make around 12 muffins. Bake at 200 degrees for 15-20 min.

These are quite plain, but can be improved by adding:
- 1/2 cup sultanas (stir into the dry ingredients)
- Applesauce + cinnamon
- grated apple + cinnamon
- 2 very ripe bananas mashed up + cinnamon & nutmeg
- 1/3 to 1/2 cup choc chips
- mashed cooked pumpkin + nutmeg
- sprinkling brown sugar on top before they go in the oven
- whatever you happen to have!

I picked this recipe up as a 1st year apprentice and use it ALL the time for any quick simple cake or muffin.

The basic recipe you can add whatever flavours you want to; chocolate, berries, etc. It doesn't change the recipe just add your flavours - except banana; reduce the wieght of banana from the total weight of butter required and cream it all together.

RECIPE
125g butter; at room temp
3/4 cup caster sugar

2 eggs

2 cups self-raising flour, sifted
3/4 cup milk


METHOD
1. Cream butter and sugar until light and fluffy (and banana if using banana)
2. Add eggs one at at time until blended
3. Fold flour through (stir as little as possible as the longer you mix the tougher it becomes)
4. Pour in milk - you may not need to add it all depends on the flour and eggs etc; it should be like a thick cake batter
5. Bake on around 180 until cooked.

I found these on the Ready Steady Cook website... they are really yummy! I made them in a 12 hole muffin tin, which meant it was about 1tbsp mixture per hole. Next time I will double the mixture and make them bigger.

CHOC CHIP MUFFINS.
Ingredients:
1 cup self raising flour
¼ cup caster sugar
½ cup milk
20g butter, melted
1 egg
150g dark chocolate, roughly chopped
Icing sugar, to serve

Method:
1 Preheat oven to 180°C fan-forced. Grease a six hole, 1/3-cup capacity muffin pan.
2 Place flour and sugar in a bowl. Add milk, butter, egg, and chocolate, stir until just combined.
3 Divide mixture evenly among muffin holes. Bake for 15-20 minutes, or until a skewer inserted into the centre of muffin comes out clean.
4 Stand in pan for 5 minutes. Transfer to a wire rack. Dust with icing sugar and serve warm
