I was thinking about making a sweet risotto. Maybe something vanilla with frozen berries???

Anyone got any recipes??

this prolly wont help much.. mum used to make a similar thing, rice cooked with curry power, add chopped up apple and sultanas, and fruit chutney.. its a Kiwi recipe...

Leonie, I think a sweet risotto, would be your rice custard.

I'm a keen risotto maker, and I would think maybe you could make a 'stock' of fruit juices or vanilla extract added to water. And as the 'butter' a dollop of thickened cream or maybe that delicious thick custard. Then add the berries. Maybe the stock could be the juice of the berries to give it a lovely pink/red colouring. I think a chocolate risotto would be devine! Now I want sweet risotto! You'll have to let us know how it goes!

What sorts of quantities are we talking? I only really have one recipe for risotto that wasn't rediculiously fiddly and I lost it, or the kids cut it up... can't remember lol:laughing:

Generally I make my risotto 1 and a half cups of rice to 1+L of stock.

In regards to the vanilla 'stock' you could use extract 1 1/2 tbl per litre. Then about 250-500g of mixed berries. Should feed about 6 I reckon.
